Chapter IV

Technical Aspect

Introduction

In this chapter we will discuss the proposed of the project, in the discussion of

basic and operation flow of the project. Technical Aspect is the one of the essential of

this study because these factors respond to the technicalities and basic structure of the

proposed study. This includes the equipments, materials, structure plan and also the

source of the supplier use in the proposed project. Business plan, promotions,

strategies utilities, facilities, layout design and location includes in this chapter.

It is also discusses about the processes of production and activities of the

company. It states also the machineries and equipment used in production and other

aspect regarding bringing the raw materials into a finished product ready to sell or to

trade , Plant layout, the sized of area and production scheduled are all present for the

purpose of the identifying the business operation. Also product specification the product

processes using flow chart, the lists of the machinery, tools and equipments are

enumerated with their corresponding costs. The raw materials and fund sources are

also cited

Our Product Amapalaya Ice cream is on the cold dessert industry, ice cream is

pretty popular on tropical country like Philippines, people like eating cold foods when

experiencing too much heat on the body, that why we choose to make ice cream as our

product because there is a demand on cold dessert on the Philippines

to physical and chemical process
In this time ice cream industry is one of the famous business type of business

because it is easy to sell and everyone loves ice cream mostly kids, but the normal ice

cream have lots of fats on it because it is made on cream, well it calls ice cream

because it have a cream so basically it is really have a lot of calories on it, but we made

a ice cream that lessen the fat and make it tastier and nutritious but adding a vegetable

on it, we add some Ampalaya (bitter gord) to balance the taste and to add so nutrient to

the ice cream, and not only that we add some fruits on it like mango, langka, banana,

and chocolate, to maximize the flavor and the aroma of our ice cream.

In this era, most of the people love to eat sweet foods , and because if that most

of the people became fatter and bigger because they are eating too much calories that

can be found in those sweet foods but we made our ice cream healthy so even those

person that don’t eat ice cream can eat it, in the Philippine ice cream is one of the

favorite dessert, ice cream is usually made from dairy products, such as milk and

cream, and often combined with fruits or other ingredients and flavors, but we made our
ice cream with natural ingredients like coconut milk, cow milk, for the ice cream mixture

so we can lessen the fat that a person can obtain by eating ice cream, and we choose

high quality of ampalaya to ensure the great taste and to maximize the time of

expiration date of our ice cream The mixture of chosen ingredients is stirred slowly while

cooling, in order to incorporate air and to prevent large ice crystals from forming. The

result is smoothly textured semi-solid foam that is malleable and can be scooped,

business near in a supermarket and public school so we can get our target customers

easily, our location can be foundin Juan Sumulong High School’s front gate, because our

method of distribution of our product is through Food cart ,so students from this school can

notice our store and we pick this location because it is near in the Farmers market when

we can get some of our raw materials, and to get customers coming from that market

former restaurant but they decided to stop so its free now,

7.1 Description and Specification

Amapalaya – also known as Bitter Gord A tropical

annual vine native to Asia, having yellow flowers and

orange, warty fruits that open at maturity to expose

red-coated seeds. Various parts of the plant are

used in traditional medicine or for food. We use

amapalaya as our main ingredient to our ice Cream

Coconut Milk - Coconut milk is the liquid that comes

from the grated pulp of a mature coconut. Coconut


milk is a popular food ingredient used in Southeast Asia, South Asia, the Caribbean, and

northern South

America.we use coconut milk as our cream to make


our ice cream more nutritious and delicious

Evaporated Milk - Evaporated milk, known in some

countries as "unsweetened condensed milk" is a shelf-

stable canned milk product with about 60% of the

water removed from fresh milk. It differs from

sweetened condensed milk, we add evaporated milk to

the Ice Cream Mixture to make ice cream

Sugar - a sweet crystalline substance obtained from

various plants, especially sugar cane and sugar beet,

consisting essentially of sucrose, and used as a

sweetener in food and drink. We use sugar to add

sweetness to our ice cream

Mango - are juicy stone fruit (drupe) from numerous

species of tropical trees belonging to the flowering


plant genus Mangifera, cultivated mostly for their edible fruit. We use mango to add a

unique flavor to our ice cream

Langka – also known as Jackfruit, Jackfruit is

commonly used in South and Southeast Asian

cuisines. The ripe and unripe fruit is used, as are the

seeds. We use langka to add a unique flavor to our

ice cream.

Cocoa Powder -  an unsweetened powder produced by

grinding cacao beans and pressing out the cocoa butter,

better known as fat. The resulting cocoa powder is low in

fat, we use cocoa powder to add a unique flavor to our ice

cream

milk in can as alternative coconut milk,

coconut milk from can is already processed

Ice Cream Powder – we use ice cream powder incase there is

a inflation happen on Milk industry, ice cream powder is also

same as the ice cream mixture but powdered

Pure Manga Juice – we use Pure Manga Juice as alternative to

mangoto add flavoring to our ice cream,

Supply of ingredients is one of the most important aspect in your business, the

distance you need to travel to get your ingredients is essential because if its too far it can

affect the quality of the ingredients so picking the nearest market to get your ingredients is

important, so we pick the ( name of market) to get our ingredients because it is near to our

production site and it is easy to access and we can get all of our ingredients there.

we done on social media sites like Facebook, Tweeter, etch.

9. Waste Disposal

9.1 Description and Quantity of Waste to be Disposed

As our business is a part of food industry we usually makes trash such as

biodegradable and non-biodegradable that comes from our raw ingredients and

equipment, so always tend to have lots of trash,

9.2 Description of the waste disposal method


Having a good sanitary production area is important on making product, because

it can affect the quality of the product, so we clean our working station everyday so it can

never affect the quality of our product. We dispose our trash using a trash bag and dump it

when the garbage truck passes by on our production area.
