3 minced garlic cloves

1 can (12 ounces) of crushed tomatoes
1 ½ tsp sea salt
½ lb. ground beef
1 chopped small yellow onion
1 can (12 ounces) of petite diced tomatoes
3 links pork sausage (casings removed)

Procedure:
Heat 2 tbsp olive oil in a large Dutch oven on medium heat.
Cook the pork sausage in the Dutch oven and use a wooden spoon to break it
into smaller pieces. Cook for around 5 minutes or until it becomes brown.
Put the ground beef, cook, and stir until the beef becomes brown and
crumbly. Remove excess fat.
Put the rest of the olive oil on the sausage mixture. Add the garlic, salt, black
pepper, onion, and eggplant. Cook and stir for around 10 minutes or until it
becomes light brown.
Add the mushrooms and cook for around 5 minutes or until it becomes
tender.
Combine the diced tomatoes, crushed tomatoes, oregano, parsley, and basil in
the sausage mixture and wait for it to boil.
Cover the Dutch oven, lower the heat to medium-low, and simmer for 30
minutes.
16 - Roasted Red Pepper Cream Sauce

This creamy and light sauce has pureed roasted red peppers as its main
ingredient. It works very well in any kind of pasta, but it matches the best
with ravioli or tortellini.

2 large red bell peppers
¼ cup of fresh basil
¼ cup of grated Romano cheese
2 tbsp minced garlic
3 tbsp extra virgin olive oil
2 cups of half-and-half
4 tbsp butter

Procedure:
Preheat the broiler. Use the olive oil to coat the red peppers lightly.
Grill the peppers under the broiler until the flesh becomes slightly soft and
the skin becomes black. Put the peppers in a resealable plastic or paper bag
and let it cool for around 45 minutes.
Remove the skin and seeds of the peppers and cut them into small pieces.
Cook and stir the garlic, red peppers, and basil in a skillet with 3 tbsp olive
oil on medium heat for about 10 minutes.
Put the mixture in a blender and puree it. Put the puree in the skillet and
reheat.
Add in the Romano cheese and half-and-half. Cook and then stir until the
cheese melts.
Mix the butter until it melts. Season with salt and pepper and let it simmer for
5 minutes.
17 - Ground Beef Stroganoff

Because of the ground beef, this stroganoff sauce recipe is comforting,


delicious, and quick. You can enjoy it with pasta or mashed tomatoes.

Ingredients:
2 tbsp all-purpose flour
1 tsp garlic powder
1 lb. lean ground beef
¼ tsp ground black pepper
⅓ cup of chopped onion
1 cup of sliced fresh mushrooms
½ tsp ground paprika
2 tbsp butter
1 tbsp Worcestershire sauce
1 tsp seasoning salt
1 can (10.5 ounces) condensed cream of mushroom soup
¾ cup of sour cream (or more)
Optional: 1 tbsp liquid smoke (or to taste)

Procedure:
Melt the butter in a large skillet on medium-high heat.
Sauté onions and mushrooms in the skillet for around 5 minutes or until the
onions become translucent.
Put the ground beef. Cook and stir for 5 to 7 minutes or until it becomes
crumbly and brown.
Sprinkle seasoning salt, garlic powder, pepper, paprika, and flour and mix
until well combined.
Add the sour cream, Worcestershire sauce, liquid smoke, and condensed
soup. Lower the heat to medium and cook for 5 to 7 minutes or until the
sauce becomes thick.
18 - Cheese Sauce

This cheese sauce is not only easy but also versatile. You can use it in many
dishes such as pasta, vegetables, poached eggs, toast, and many more.

2 cups of half-and-half
2 cups of shredded Cheddar cheese
½ cup of butter
½ tsp cayenne pepper
¼ cup of all-purpose flour
1 tsp salt

Procedure:
Melt the butter in a saucepan on low heat. Mix the flour in and cook for 2 to 3
minutes or until the mixture becomes smooth and bubbly.
Take it off from heat and add in the cheddar cheese, salt, pepper, cayenne,
and half-and-half.
Heat it again and constantly stir for around 5 minutes or until the sauce
becomes smooth. Keep it warm until serving.
19 - Oxtail Ragu

This recipe is almost fail-safe because of the rich brown oxtail sections that
are simmered low in a rich tomato sauce.

Ingredients:
¼ cup of sherry vinegar
1 tsp kosher salt (or more)
1 sprig of fresh rosemary
2 sprigs of fresh oregano
2 cups of chicken broth
4 cups of tomato sauce or puree (or more)
¼ tsp red chili flakes
6 roughly chopped garlic cloves
1 diced large yellow onion
2 sprigs of fresh thyme
3 ½ lb. beef oxtail (cut into 2-inch sections)
1 tbsp olive oil
Salt and freshly ground black pepper

Procedure:
Preheat the oven to 425 degrees. Lightly oil a baking pan that’s large enough
to place your oxtails in one layer.
Put the garlic and chopped onions in the pan and use olive oil to rub the
oxtail sections.
Season with salt and fresh ground black pepper. Arrange on top of onions.
Roast in the oven for 25 minutes. Turn the oxtails and roast for 20 to 35
minutes more until it becomes well brown. Take the pan out of the oven.
Add the tomato sauce, wine vinegar, chicken broth or water, thyme,
rosemary, salt, red chili flakes, and oregano to the pan and place the mixture
in a large pot.
Put it on medium-high heat until the sauce starts to simmer. Cover, lower the
heat to low heat, and simmer for around 4 to 5 hours or until the meat
separates easily from the bone and becomes very tender. Remove fat before
serving.
20 - Avocado Cream Sauce

This avocado cream sauce is best served with pasta and smoky grilled
chicken. It is worth trying if you want a pasta sauce that is basic and simple
yet delicious.

2 avocados
½ tbsp chopped fresh tarragon
1 tbsp chopped fresh cilantro
½ juiced lime

Puree the garlic, lime juice, avocados, cilantro, tarragon, and green onions in

cream and cook until well heated but not boiling. Season with salt.

You can replace the lobster with shrimp or crab when you make this very

Ingredients:
¼ cup of butter
1 cup of sliced fresh mushrooms
1 lb. diced lobster meat
¼ cup of all-purpose flour
1 cup of chicken broth
1 cup of heavy cream

Procedure:
Melt the butter in a medium saucepan on medium heat. Gradually cook and
sit the mushrooms in the butter until it becomes tender.
Add the lobster meat and cook until it becomes opaque. Take the mushrooms
and lobster out of the pan and set them aside.
Lower the heat to low and put the flour in the pan. Cook and stir for about 2
minutes.
Add the heavy cream, pepper, and chicken broth in and simmer for 5 to 10
minutes or until it becomes thick.
Add the Parmesan cheese, mushrooms, and lobster to the sauce mixture and
cook for 5 minutes more.
22 - Pink Sauce

Pasta or rice works really well with this pink shrimp sauce.

Ingredients:
1 cup of heavy cream
1 tbsp mustard seed
4 tbsp tomato puree
4 tsp lemon juice
1 tsp salt (and to taste)
2 lb. peeled and deveined medium shrimp
½ tsp white sugar
2 chopped garlic cloves
¼ tsp cayenne pepper
1 ½ tsp grated fresh ginger root
¾ cup of water
1 tsp ground cumin
3 tbsp vegetable oil
Black pepper to taste

Procedure:
Put the tomato puree in a measuring cup. Add enough water to have a total of
1 cup. Transfer it to a medium bowl and mix the ginger, cream, lemon juice,
cayenne pepper, salt, black pepper, sugar, and cumin. Cover and put it in
your refrigerator until needed.
Heat oil in a large frying pan on medium-high heat. Put the mustard seeds.

the consistency you want.
Simmer for 5 to 10 minutes or until you get the consistency you want.
Add the thyme and sage to the sauce.

Ingredients:
1 tsp salt
2 tsp dried basil
½ tsp pepper
2 tsp sugar
2 minced garlic cloves
2 cans (16 ounces each) of undrained diced tomatoes

For the meatballs:


3 cups of soft breadcrumbs
½ cup of water
1 lb. ground pork
2 tbsp minced fresh parsley
2 lightly beaten large eggs
1 lb. ground beef
1 minced garlic clove1 tsp salt
½ cup of grated Parmesan cheese
¼ tsp pepper

Procedure:
Combine all the ingredients except the meatball ingredients in a 6-quart pot.
Boil, lower the heat, and simmer covered for 1 ½ hour. Occasionally stir.
To make the meatballs, preheat the oven to 400 degrees.
Mix the water and breadcrumbs in a large bowl and let it stand for 5 minutes.
Add the cheese, eggs, garlic, salt, pepper, and parsley. Put the pork and beef
and lightly but thoroughly mix.
Shape the mixture into 1-inch balls.
Put the meatballs on a greased rack in a 15x10x1-inch baking pan and bake
for 15 to 20 minutes or until cooked.
Add the meatballs to the sauce and gently stir to combine.
25 - Seafood Alfredo
