Makes 8 Large Cookies (170 to 190g each)
Butter 165g Unsalted cold and cubed
Caster Sugar 135g Or use homemade ground sugar Trust, Mawana
Brown Sugar 110g Trust, Mawana
Milk 85g Cold from fridge Any Toned Milk
All Purpose Flour 375g
Baking Powder 3 tsp
Salt ¾ tsp
Milk Chocolate Chunks 150g 32% to 37%, chopped into cubes Callebaut, Vanhouten, Morde
Nuts 110g Roasted & chopped nuts of your choice
Chocolate insert 30g * 8 32% to 37%, chopped into cube Callebaut, Vanhouten, Morde
Baking Temperature 180 D Middle Rack, Use both rods
Baking Time 13 minutes

Procedure:
1. Add cold butter and both the sugars to a bowl, Crumble. Don’t make a paste. Add the dry ingredients,
roasted chopped nuts and all the chocolate chunks. Add milk and form a dough, don’t over knead
2. Make rough balls with the chocolate insert and slightly flatten it
3. Place the cookies on the baking racks lined with parchment paper or silicon mat. If you have a small oven
then bake only 3 cookies in one go
4. Make sure to give 2-to-3-inch space in and around each cookie. Bake them in a preheated oven at 180°c for
13 minutes. Remove the baking tray from the oven, Cool the tray on a cooling rack for 20-30 mins. Remove
the cookies from the baking tray only after the cookies are completely cooled. If you remove the cookie
while it is still warm then the cookies might break
5. Serve warm or cold

Caster Sugar 90g Trust, Mawana
Brown Sugar 90g Trust, Mawana

All Purpose Flour 360g
Cocoa Powder 3 tbsp Callebaut, Morde, Hersheys
Baking powder 1 ½ tsp
Salt ¾ tsp
Hazelnuts 110g Roasted & chopped
Dark Chocolate Chunks 150g 45% to 55%, chopped into cubes Callebaut, Vanhouten, Morde
Chocolate insert 30g * 8 45% to 55%, chopped into cubes Callebaut, Vanhouten, Morde
Baking Temperature 180 D Middle Rack, Use both rods
Baking Time 13 minutes

Procedure:
1. In a large mixing bowl, using a hand beater beat the butter and both the sugars until blended well, not
fluffy (don’t over beat). Now add flour, salt, baking powder, sieved cocoa, all the hazelnuts and dark
chocolate chunks. Add milk and form a smooth dough
2. Make smooth balls of cookie dough and insert the chocolate. Cover the chocolate insert and slightly
flatten it. Place the cookies in baking racks lined with parchment paper or silicon mat
3. Make sure to give 2-3-inch space in and around each cookie. Bake them in a preheated oven at 180°c for 10
to 13 minutes. Remove the baking tray from the oven, Cool the tray on a cooling rack for 20-30 mins.

1. How to know if the cookie is done?
After the baking time is done, wear gloves on one hand, turn off the oven, slide the baking tray partially
out, using another hand gently touch the top of the cookie and see
- if you feel the inside is runny/watery then you need to bake for another minute or so
- If the cookie feels soft and if you feel the top like a cushion without liquids oozing out then
remove the cookie
2. Preheat the oven along with the baking tray, and place the cookies on that hot tray for baking to get crispy
bottom
3. Don’t over beat butter and sugar
4. Don’t over knead the dough
5. Don’t use compound chocolate, they don’t create gooey cookies
6. While making cookie balls don’t press the cookie balls too much and make them dense
7. Over baking the cookie is fine as a beginner, you will learn to adjust the timing as you practice and
understand your oven
8. Under baking the cookie is fine, because you know how to fix it in step 1
9. For a gooey cookie follow step 1
10. Cookies on the next day will become soft, remember these are cookies and not biscuits
