Topic 1: Eggless Double Chocolate Brownie

Eggless Brownie By Jeyadra Vijayselvan

Ingredients Final Weight ~ 850g Notes Brand Suggestion


Butter 110g Salted or Unsalted
Super Fine Sugar 250g Regular sugar powdered in mixie
Dark Chocolate 150g 55% coverture Vanhouten, Morde, Callebaut
Water 80ml
Coffee Powder 1 tsp
Milk 80ml Any Milk
Cocoa Powder 30g Unsweetened 100% cocoa Morde, Vanhouten, Hersheys
All Purpose Flour 180g
Chocolate Chunks 200g 32% to 36% Milk Chocolate Vanhouten, Morde, Callebaut
Baking Tin Size 8" by 8" square
Baking Temperature 180c Middle Rack, Use both rods
Baking Time 23 minutes

Procedure:
1. Melt butter in a saucepan until it becomes frothy. To this, add water, milk, coffee powder and powdered
sugar. Mix until the sugar dissolves completely
2. Make sure that the sugar is dissolved completely. And then add the dark chocolate and cocoa powder. Mix
until chocolate and cocoa powder dissolves well in the mixture. Mix this until it forms a homogenous
chocolate slurry. Allow to cool
3. Add flour in two batches. Do not overmix the batter. The batter will be neither thick nor thin. It will have
a ribbon consistency. Add the chocolate chunks and mix
4. Pour the batter into the prepared tin. Place 9 pieces of 1 inch milk chocolate in equal distance. Bake at
180C in a preheated oven for 25 to 27 minutes

1 Classic Brownie Remove all chocolate chunks and bake. Serve it with ice cream
2 Nutella Brownie Microwave 200gms of nutella for 5 secs and swirl it on the
brownie batter. Sprinkle it with hazelnuts and bake
3 Biscoff Brownie Microwave 200gms of biscoff fore 5 secs and swirl it on the
brownie batter. Place some biscoff biscuits on top and bake
4 Oreo Brownie Pour half of the brownie batter and spread it nicely in the pan.
Layer it with oreo biscuits. Top it with remaining batter and bake
5 Triple Chocolate Brownie In place of milk chocolate chunks add mix of dark, milk and
white chocolate chunks
6 Death by Chocolate Add dark chocolate chunks in place of milk chocolate. Melt
Brownie 200gms milk chocolate and swirl it on the batter and bake
7 Walnut Brownie Sprinkle 80gms of chopped walnut and bake
8 Fruit & Nut Brownie Sprinkle 80gms of dry fruits and nuts of your choice and bake
9 CheeseCake Brownie Take 250gms of cream cheese. Mix 4 tbsp of icing sugar and 3
tbsp of water. Swirl this on top of the batter and bake
10 Nutella Cheesecake Brownie Take 150gms of cream cheese. Mix 3 tbsp of icing sugar and 2.5
tbsp of water. Swirl this on top of the batter. Microwave 150gms
of nutella for 5 secs and swirl it on the cheese batter
