Orange Juice Processing

Orange juice is a healthy and refreshing

drink. It can be prepared easily at home.

At first, ripe oranges are bought from the

market. Then the oranges are sorted. The

defective and rotten ones are removed.

After that, the good oranges are properly

cleaned with fresh water. Later they are

peeled. Then these are put into the juicer

to extract the juice. After that, sugar and

preservatives are mixed with the juice in

the right proportions. Next, the mixture is

poured into sterilized bottles. Then the

bottles are sealed and labelled. Finally,

orange juice is ready and is sent to the

market for sale.

How Orange Juice is Made in

Factory
As orange juice is a popular drink, it is

prepared in factories to meet the

demand. The main process consists of 7

stages. They are a) Cleaning and sorting

b) Juice Extraction c) Filtration d)

Additives e) Degassing f)

Pasteurization g) Filling and Cooling

Cleaning and Sorting:

At first, oranges are supplied from the

farms. Then these oranges are put on

conveyor belts. Machines like brush and

spray Fruit Washing Machines and Bubble

Washing Machines clean all the impurities

on the oranges. The unripe oranges,

pests and damaged oranges are removed

here.

Juice Extraction:

In this stage Juice from the oranges is

extracted. Machines like automatic Fruit

peeling and extraction machines are used

in this stage. Peeling is necessary

because some elements like Limonin and

Naringin make the juice bitter.

Filtration:

Filtration is necessary because there are

always some particles left in the juice.

They must be removed to maintain the

quality (taste and colour) of the juice.

Additives

Sometimes when the taste of the juice is

not good, some additives like sugar and

acid (Citric) are added to the juice in the

right proportion.

Degassing

In the process of making orange juice, the

air is trapped in the juice and forms

bubbles. These bubbles must be

removed. Oxygen in these bubbles harms

the colour and taste of the juice.

Pasteurization

In this stage, orange juice is pasteurized

with heat. Pasteurization is necessary for

keeping the juice fresh for a long time.

Pasteurization kills all the harmful

bacteria in the juice. It also makes the

enzymes inactive.

Filling and Cooling

After Pasteurization, the juice is directly

filled into sterilised cans and bottles.

Cans and bottles are sterilised with heat.

Preparation

1. Selection of oranges

At first fresh and ripe oranges are

bought from the market.

2. Washing of Oranges

Then oranges are washed in fresh

water.

3. Peeling

Oranges are peeled. This increase

the taste of the oranges.

4. Use of Juicer or Grinder

Peeled oranges are then put into a

juicer or Grinder to extract juice.

5. Sieving

Raw juice is then sieved to clear

impurities

6. Additional preservatives

To increase the taste and for

preservation, some chemicals

sugar and citric acid are added.

7. Packaging

At last the juice is poured into

sterilised bottles.

8. Storing

The bottles are then stored in the

refrigerator for storing

9. Serving

The juice is then served cool with

ice on it.
