Staple Foods
NOTE: Couscous, polenta and quinoa are excluded from staple foods.
Processed Meat, Seafood and Alternatives to Meat
This is the aggregation of processed meat, processed seafood and meat and seafood
substitutes.
Processed Meat
Processed meat includes all meat products that have undergone processing which extends
beyond simple gutting/cleaning/butchering of the animal. Typically, an additional ingredient or
characteristic must also be added during processing, such as a seasoning, sauce, marinade,
breading, etc. The product may also already be cooked, meaning that it must only be
defrosted and/or reheated before consumption. They must be sold via retail and foodservice
outlets as pre-packaged. Unpackaged processed meat sold over-the-counter, e.g. at deli
counters, is wholly excluded.
Shelf Stable Meat
Meat and poultry typically sold in cans, glass jars or aluminium/retort packaging. This includes
processed plain meat products such as sausages, hot dogs, ham, corned beef, spam,
luncheon meat, pâté etc. Meat packaged with additional vegetable ingredients and/or sauces
fall under shelf stable ready meals. Meat snacks which are not usually cut before snacking fall
under other savoury snacks. Ambient/shelf stable meats from China called Huo tui chang are
included. Leading global companies include WH Group, Tyson Foods and Hormel Foods.
Shelf Stable Processed Red Meat
Shelf stable meat typically sold in cans, glass jars or aluminium/retort packaging. This includes
processed plain meat products such as sausages, hot dogs, ham, corned beef, spam,
luncheon meat, pâté etc. Meat packaged with additional vegetable ingredients and/or sauces
fall under shelf stable ready meals. Meat snacks which are not usually cut before snacking fall
under other savoury snacks. Ambient/shelf stable meats from China called Huo tui chang and
shelf stable meat with added salt (such as chorizo or salami) are included here.
Shelf Stable Processed Poultry
Shelf stable poultry typically sold in cans, glass jars or aluminium/retort packaging. This
includes processed plain poultry products such as sausages, pâté etc. Poultry packaged with
additional vegetable ingredients and/or sauces fall under shelf stable ready meals.
Chilled Processed Meat
Packaged processed meat (i.e., beef, pork, lamb, poultry) sold in the self-service shelves of
retail outlets. This includes burgers (meat or poultry based), nuggets, sausages, frankfurters,
mortadella, pâté, ham (standard or smoked), salami (also regional specialities such as German
or Italian salami), bacon, pepperoni, chorizo, etc. Unpackaged chilled processed meat sold
over-the-counter (ie, via deli counters) is wholly excluded. Note sales of packaged raw
pieces/cuts of meat and minced meat that don’t have any sauce or herbs added are also
excluded, as these are not considered to be “processed”. Raw pieces of meat that have a
sauce, marinade or herbs and spices added, are considered processed and are included.
Chilled Processed Red Meat
Packaged processed red meat (i.e., beef, pork, lamb) sold in the self-service shelves of retail
outlets. This includes burgers, sausages, frankfurters, mortadella, pâté, ham (standard or
smoked), salami (also regional specialities such as German or Italian salami), bacon,
pepperoni, chorizo, etc. Unpackaged chilled processed red meat sold over-the-counter (i.e.,
via deli counters) is wholly excluded. Note: sales of packaged raw pieces/cuts of red meat
and minced meat that don’t have any sauce or herbs added are also excluded, as these are
not considered to be “processed”. Raw pieces of red meat that have a sauce, marinade or
herbs and spices added are considered processed and are included.
Chilled Processed Poultry
Packaged processed poultry (i.e. chicken, duck) sold in the self-service shelves of retail
outlets. This includes poultry-based burgers, sausages, kievs, breaded chicken fillets,
mortadella, pâté, etc. Unpackaged chilled poultry sold over-the-counter (i.e. via deli
counters) is wholly excluded. Note: sales of packaged raw pieces/cuts of poultry and minced
poultry that don’t have any sauce or herbs added are also excluded, as these are not
considered to be “processed”. Raw pieces of poultry that have a sauce, marinade or herbs

and spices added, are considered processed and are included.
Frozen Processed Meat
This is the aggregation of frozen processed poultry and frozen processed red meat.
Frozen Processed Red Meat
Processed products are cuts of plain meat which are further prepared, typically with the
addition of other ingredients including sauce, marinade, seasoning, breading/batter, etc.
Product types include: sausages, meat burgers, boeuf Bourguignon, pork chop with
seasoning, beef in curry sauce, wiener schnitzel, etc. Please note that basic plucking, gutting
and/or butchering on its own is not sufficient to be considered processed according to
Euromonitor’s definitions. Such products would be considered unprocessed, and thus wholly
excluded from Euromonitor’s Staple foods coverage. They would be tracked in Euromonitor’s
separate Fresh Food research. Plain meat cuts e.g. beef steak, pork chops and minced meat
are thus excluded.
Frozen Processed Poultry
Processed products are cuts of poultry, which are further prepared, often with the addition of
other ingredients including breading/battering, sauce, herbs/seasonings/marinade, etc.
Product types include: chicken Kiev, chicken wings in sauce, chicken drumsticks with
seasoning, turkey with breadcrumb coating, duck à l’orange, turkey sausages, chicken
nuggets, etc. Please note that basic plucking, gutting and/or butchering on its own is not
sufficient to be considered processed according to Euromonitor’s definitions. Such products
would be considered unprocessed, and thus wholly excluded from Euromonitor’s Packaged
Food coverage. They would be tracked in Euromonitor’s separate Fresh Food research.
Processed Seafood
This is the aggregation of shelf stable seafood, chilled processed seafood and frozen
processed seafood.
Shelf Stable Seafood
Shelf stable fish, shellfish and seafood typically sold in cans, glass jars or aluminium/retort
packaging. The product is also usually preserved in oil, brine, salt water or with a sauce (e.g.
sardines in tomato sauce). Pickled fish/seafood sold ambient is also included here. Product
types include: cod, haddock, mackerel, sardines, tuna, prawns, crab, mussels, anchovies,
caviar etc. Products packaged with other additional ingredients (i.e. meat and/or vegetables)
fall under shelf stable ready meals. Leading global players include Dongwon Group, Thai Union,
Bolton Group.
Chilled Processed Seafood
Includes all packaged processed chilled fish/seafood products sold in the self-service shelves
of retail outlets. Unpackaged chilled processed fish/seafood products sold over-the-counter
(ie, deli counters) are excluded. Sales of packaged raw pieces/cuts of fish/seafood are also
excluded. Includes packaged processed fish/seafood products sold in a self-service format.
Includes processed fish/seafood products sold together with a sauce. Includes cooked
prawns. Note: Herring products sold in chiller/refrigerator cabinets, and which have a shelf life
of more than 6 months are excluded here. These products, which are very common in
Scandinavian countries, are included in shelf stable seafood as they have similar shelf life to
shelf stable fish sold ambient.
Frozen Processed Seafood
Processed fish and seafood products which are further prepared with the addition of other
ingredients, including breading/batter, sauce, seasoning, etc. Product types include: fish
fingers, battered or breaded fish, fish with any type of sauce, fish balls, fish fillets, cuttlefish
balls, scampi, calamari, etc. Please note that basic cleaning and gutting on its own is not
sufficient to be considered processed according to Euromonitor’s definitions. Such products
would be considered unprocessed, and thus wholly excluded from Euromonitor’s Packaged
Food coverage. They would be tracked in Euromonitor’s separate Fresh Food research.
Meat and Seafood Substitutes
This is the aggregation of shelf stable meat and seafood substitutes, chilled meat and
seafood substitutes and frozen meat and seafood substitutes.
Chilled Meat and Seafood Substitutes
Includes all type of chilled meat and fish substitute products. Product types include:
sausages, burgers, mince, balls, filets, steaks, mock meat, etc. Typically made of Quorn
mycoprotein, soy, or texturised vegetable protein. Note that falafel is excluded and tracked in
ready meals, and all tofu products are excluded and tracked under Tofu and derivatives
unless explicitly positioned as meat substitutes.

substitutes. Includes tempe/tempeh, beancurd skin (dried, wet, flavoured), fried tofu puffs,
filled tofu and other tofu derivatives. All chilled, shelf-stable and frozen variants are included
here. Also includes soy-free tofu, for example made from hemp, pumpkin seeds or chick peas.
