UBE HALAYA RECIPE 2

Ube halaya, also known as purple yam jam or purple yam pudding, is a popular Filipino dessert known
for its vibrant purple color and sweet, creamy flavor. Here's a traditional recipe to make ube halaya at
home:

Ingredients:

 2 lbs (about 900g) purple yams (ube), peeled and cubed

 1 can (14 oz/400g) sweetened condensed milk

 1 can (13.5 oz/400ml) coconut milk

 1 cup granulated sugar

 1/4 cup unsalted butter

 1 teaspoon vanilla extract (optional)

 Pinch of salt

Instructions:

1. Steam or boil the peeled and cubed purple yams until they are fork-tender, about 20-25
minutes. Drain the cooked yams and let them cool slightly.

2. Once the purple yams are cool enough to handle, mash them until smooth using a potato
masher or fork. You can also use a food processor for a smoother consistency.

3. In a large pan or pot, combine the mashed purple yams, sweetened condensed milk, coconut
milk, granulated sugar, and a pinch of salt. Stir well to combine all the ingredients.

4. Place the pan over medium heat and cook the mixture, stirring constantly, until it thickens and
becomes smooth and creamy. This can take about 20-30 minutes.

5. As the mixture cooks, add the unsalted butter and continue to stir until it is fully incorporated.

6. Optional: If you want to enhance the flavor, you can add vanilla extract at this stage. Stir well to
combine.

7. Continue cooking and stirring the mixture until it reaches your desired consistency. It should be
thick and able to hold its shape.

8. Once the ube halaya is done, remove it from the heat and transfer it to a serving dish or
individual containers.

9. Let the ube halaya cool completely at room temperature before refrigerating it. Chilling it in the
refrigerator will help it set further.

10. Serve the chilled ube halaya as a delightful dessert on its own or as a topping for halo-halo, ice
cream, or other Filipino desserts.
