A Michelin star is a highly prestigious award given exclusively to restaurants worldwide for their
amazing and unique food. And recently, four Vietnamese restaurants were awarded a one-star rating for the
first time.
Inside an old market near the Bitexco Financial Tower in Ho Chi Minh, Anan Saigon is known as a fine
dining restaurant. However, it specializes in street food-inspired dishes. The restaurant opened April 2017 and
quickly gained global fame for its $100 banh mi that is topped off with luxury ingredients such as French foie
gras and truffle. After five years, it has received international acclaim, becoming the only representative of
Vietnam to be listed among Asia's 50 best restaurants at the World Travel Awards.
Hibana by Koki inside Capella Hotel in Hanoi's Old Quarter specializes in serving Japanese cuisine like
sashimi, yakitori, and many more. Koki also boasts several secluded dining spaces including four private dining
rooms accommodating up to eight guests. Chef Hiroshi Yamaguchi said that ingredients were the most
important factor that help his restaurant to be awarded Michelin star. "I am very strict in choosing materials
from vegetables to seafood to ensure freshness," he explained.
Located on Van Mieu Street in Dong Da District, Tam Vi takes inspiration from the Tonkin period with a
touch of northern Vietnamese architecture. Entering the restaurant, diners will find a collection of Chinese
furniture. The restaurant specializes in serving northern Vietnamese dishes. Its signature dishes include
Vietnamese ham with periwinkle (snails) that comes with fresh herbs, vegetables and rice vermicelli with fish
sauce.
Gia Restaurant first opened its doors for business in December 2020. The restaurant‟s name means
"family" in Vietnamese that derives from the family love of head chef Sam Tran and CEO Long Tran, who have
been working abroad for years. The restaurant decor draws inspiration from Hanoi's Temple of Literature. Meal
prices cost from 1.7 to 2 million VND.

Read the following passage and mark the letter A, B, C, or D on your answer sheet to indicate the correct
answer to each of the questions.
Did you know there's one simple action that can help decrease current feelings of stress and improve
your body's response? The answer is drinking water. Sufficient water intake is important every day, of course,
but it's even more critical to drink when you're stressed out.
"Stress is what we experience when our brain and body try to cope with a challenge, danger, or
uncertainty by starting physical responses like a faster heart rate and rapidly increasing adrenaline so as to
prepare us to take action," says Dr. Laura Lewis Mantell, a physician specializing in pain and stress
management. A faster heart rate and adrenaline rush sets off a stress cycle in the human body, and over time,
this can be damage your mental health and is even associated with increased risk for conditions such as
diabetes, obesity, and cardiovascular disease.
The relationship between hydration and stress control is well documented. Research from the University
of Cincinnati concluded that how hydrated you are dictates how well your body and your mind, and therefore
emotions and behaviour, handles stress. In addition, research published in the World Journal of Psychiatry
found that drinking water leads to decreased cases of depression and anxiety, both of which are stress-related
conditions. "The brain is 75 to 85 percent water, and even a 2 percent dehydration can result in fatigue,
impaired memory, and difficulties with attention and mood.", explains Dr. Cynthia Ackrill at the American
Institute of Stress.
Dr. Ackrill explains that this relates to stress because "a decrease of 1/2 litre of water will increase
cortisol levels (a hormone the body releases when stressed), and long-term cortisol production can lead to
fatigue." In this state of stress and dehydration there is often increased depression and anxiety, leading to more
stress to the body. "Water is required to convert tryptophan–an amino acid that naturally occurs in bananas,
bread, and chicken–to serotonin, the happy chemical," she adds.
As a general guideline, Dr. Mantell says to drink about 0.5 to 1 ounce of water for every pound you
weigh. "Keep water on your desk and take small sips every now and then," she says. It is also suggested that
you drink a glass of water before as well as during meals, and set hourly reminders on your phone to drink up.
And if you are bored with plain water, feel free to add a mini splash of fruit juice to create some interesting
flavours.
