Delicate pistachio cookies with lime icing

Simple and quick recipe for tender pistachio cookies with lime icing

Dough is enough for about 40 – 45 cookies:

100 g ground pistachios

250 g flour

100 g icing sugar

1 pinch of salt

150 g cold butter

1 tsp vanilla paste *

1 tbsp zest of an organic lime (or lemon )

1 egg

Molding:

3 tbsp lime glaze

100 g icing sugar

chopped pistachios

P REP ARATION
If your pistachios are not yet ground, you can grind them finely with your food processor.

Put the flour and icing sugar with a pinch of salt in a mixing bowl, add the finely diced butter and
all the remaining ingredients. Knead into a homogeneous dough using the dough hook of the
hand mixer or food processor.

Wrap it in foil and place it in the refrigerator for at least 30 minutes.

Roll out the dough on a lightly floured work surface, not too thin (approx. 6 - 8 mm) (I use this
rolling pin for this and it's great!). Now cut out the cookies (I use a star cookie cutter, you can use
whatever you like!).

Preheat oven to 175 °C top/bottom heat.


Place on a baking tray lined with baking paper and bake in the preheated oven for about 10
minutes, until the tips just start to brown!

Allow the cookies to cool, and in the meantime mix a glaze from icing sugar and lime juice.
Spread this over the cookies and decorate with pistachios. Allow to dry on a rack.

Store in an airtight cookie tin, preferably with baking paper between each layer!

N OTES
Tip: You can also make double-decker cookies from this wonderful dough. Simply roll it out a
little thinner and then fill it with pistachio cream (and then add the icing on top)... awesome!
