Bacon: The Geography

of a Breakfast Food
By: Zach Jakel, Brandon Bui, Brandon Huett,&
Jackson Inagi
Describe physical characteristics such as
climate, soil, terrain, etc Bacon is produced from pigs and are killed
in a slaughterhouse, but each country has
its own part of the pig used for bacon
Pigs are kept in a climate controlled
houses
In United States and Canada it is most
commonly prepared by pork belly in a fatty
type
Pork bellies are sorted by size and fat
percentage
The captivities of the pig depend on the
farmer ranging from little intervention to
spending most of their lives in an enclosed
house
Each pig farm adapts to the local
conditions and food supplies that will fit
their practice
Describe farming practices
Pigs are mechanically slaughtered, hundreds
at a time, on the conveyor belt of a factory A typical size of a pig farm can be around
farm 200-300 acre

In developed nations pigs are housed in

commercial farms that are climate
controlled compared to historically where
pigs were usually kept in small numbers

After the pigs are slaughtered the strips of

flesh are cut up it is soaked in brine or
rubbed in salt then dried from smoking,
after it is left out in a cold place to dry

Most of the labor in industries is done by

civilian workers and not migrant workers
Describe technological or chemical
dependence during farm production
Manufacturing bacon is a simple process
that usually involves injection followed
by a short massaging process and
cooking along with smoking and chilling
All the genetic science applied to pork
production has yielded leaner, meatier
animals. Thus, fat and meat portions
of pork bellies are different now.
Traditional ingredients in bacon
manufacturing are water, salt, sugar,
nitrate, sodium, and phosphates
The amount of the ingredients in the
formulation is based on the percentage
of injection, and so it is critical to aim
for that percentage when injecting.
Why is bacon produced in
the United States?
When was bacon first produced in the United
States(and under what circumstances)? How is
contemporary food production(of bacon) in the United
States aninoutcome
In 1924, of historical

sliced bacon, for which it received a U.S. government patent

But cooked/cured pig has been around since the first European settlers in
America for the consumption of the people, its origin being 16th century
England and then spread to America

Bacon is a cured piece of pork belly and is preserved by a combination of

salt, sugar, or nitrites

Meat has historically been preserved by salt and sugar throughout history, so
the way bacon is preserved today is affected by the way meat was preserved
before as well
Does the United States climate and terrain offer a
natural advantage for producing this item?
The United States farming production with pigs(third largest pork and pork
product producer in world) helps with the production of bacon in the U.S.

The good climate and terrain for pig farming allows the bacon production to be
How important is bacon to the United States economy?
high

Bacon is very important to the U.S.s economy because in the past decade,
the bacon industry has generated more than $4 billion in annual sales
Also, food trucks now employ tens of thousands and generate more than $2
billion in revenue with more production of bacon and other meat products in
recent years
Where are the markets for bacon (globally)- how
much of production is exported, how much is
consumed domestically?
Markets for bacon(globally): The United States, European Union, and China are
the largest markets of pork/bacon, Europe also has large market
countries(ex: Italy, Germany, Spain)

Netherlands exports the most bacon in world, with 128,259 tonnes, or 23% of
the worlds total, followed by Denmark with 19% of worlds total, and the
United States with 81,904 tonnes of bacon, 14% of the worlds total

China and European Union have most Per Capita(for each person)pork
consumption, 90.1 lbs in China and 89.9 lbs in the European Union

United States is 8th with 64.3 lbs per capita pork consumption
C.) Identify and characteristics of the food item that
necessitate particular means of handling processing and
transportation.
The main cuts of bacon are side, middle, back, cottage, jowl, and slab

bacon.

The one cut that us AMERICANS are most familiar with would be the

side bacon, side bacon is what we would call pork belly.

Water, salt, and sugar are the main ingredients that go into making

bacon.
C.) Identify and characteristics of the food item that
necessitate particular means of handling processing and
transportation. Transportation

When transporting pork the pork must be kept at 4 degrees c or 40

degrees fahrenheit.

The pork must be checked before packaging.

The pork must be packaged in boxes or crates when transporting.

C.) Identify and characteristics of the food item that
necessitate particular means of handling processing and
transportation.
Human contact is avoided when transporting the meat.

Fresh pork is perishable so it must be transported within two days,

and usually not transported long distances.

Trucks are most commonly used for transportation.

C.) Identify and characteristics of the food item that
necessitate particular means of handling processing and
transportation. Workers

Workers must wear gloves at all times.

Workers that are cutting the meat must have metal mesh gloves for
protection as well as an apron.

Ear plugs are needed for protection against the loud sounds of
machines.

Safety helmets are also needed.

C.) Where are the largest markets for this item?

2012 map

Pigs are mostly produced in the

northern area of of the U.S. with

production also in the south.

D. What images and types of languages
are employed for advertising?
There are multiple images that are used for advertising of
bacon and its different products that it goes into.
Many of these images consist of those in which bacon
looks the most delicious making people crave it more.
For example in this picture it makes bacon look
very delicious making the viewers of this ad
crave bacon even more.
What are the characteristics the targeted
market?
There are certain characteristics to
those that are the targeted market
of bacon consumption.
One of these characteristics is the
gender of the person, men are the
most predominant consumers of
pork and bacon is pork.
Another characteristic is race, and
the most predominant race in pork
consumption is African American.
What elements of the packaging convey
sense of the market for the public.
Some of these elements that
convey the public are simply
just making their product look
as good as it can.

For example when using bacon

with breakfast it is always with
eggs because they are known
to be always eaten together.

This gives off a good perception of
