Coffee Preparation
 is the process of turning coffee beans into a beverage. While the
particular steps vary with the type of coffee and with the raw materials,
the process includes four basic steps: raw coffee beans must be roasted,
the roasted coffee beans must then be ground, the ground coffee must
then be mixed with hot water for a certain time (brewed), and finally the
liquid coffee must be separated from the used grounds.

 Coffee is usually brewed immediately before drinking. In most areas,


coffee may be purchased unprocessed, or already roasted, or already
roasted and ground. Coffee is often vacuum packed to prevent oxidation
and lengthen its shelf life.
1. CAPPUCCINO

Cappuccino - It is an Italian coffee drink


that is similar to a latte and the only
difference is that cappuccino is foamier
and the chocolate powder is sprinkled on
top.

Instruction: The first thing we need to make is the espresso to give us bitter taste. Pour ½
cup of steamed milk over it to offset the taste of coffee. Without any big bubbles, top it off
with a layer of foamy milk. If we want it to be thicker, we can use cream instead of milk to
create a multiple layers as well as extra taste and texture. To finish it off, put a chocolate
powder on top to give us a little sweet taste as we drink it. Approximately, we need 10-15
minutes in order to prepare a cup of cappuccino.
2. CARAMEL
MACCHIATO
Caramel Macchiato - This coffee is
similar to Frappuccino. The only
ingredients needed are: cold milk, 2
shots of strongly brewed espresso,
vanilla syrup, caramel sauce and a cup
of large ice.

Instruction: Simply mix the espresso, milk, vanilla syrup and ice in a cup.
Blend it together to create a smooth texture. Once we achieve our desired
texture, drizzle the caramel sauce on top of it. Our Starbucks-worthy
caramel macchiato is ready to serve.
3. ESPRESSO

Espresso - It is a concentrated coffee


made by pressurizing the hot water
through ground coffee beans using
specific extracting machine. It is served
containing no milk.

Turn the machine on to heat up until the machine feels warm. Next, we need to place the
portafilter in the group head and, for a few seconds, run the espresso machine in order to
boil the water and for the other parts of the machine to heat up. Grind a few beans and put
the freshly ground coffee to the portafilter. Put the portafilter back to the group head and
start brewing. Start infusion and, by 3-5 minutes, we can have a cup of espresso perfect to
wake us up.
4. FRAPPUCCINO
Frappuccino - This kind of
coffee is a signature drink of
Starbucks blended with ice,
whole milk and flavored syrup. It
is topped with thick whipped
cream that add the right amount
of sweetness to it. In 5 to 10
minutes, you can imitate this
Starbucks specialty.

Instruction: The first step is to grind the coffee beans finely and brew the coffee.
Frappuccino taste best when the coffee is freshly ground. Let it cool for some time.
Once it cool down, add the sugar, milk and syrup in the blender. Have it mixed for
about 20 seconds. Once done, add ice to it and pour it in our serving tall cup. Add
whipped cream on top.
5. AFFOGATO
Affogato - Affogato is an Italian dessert
coffee that usually poured over an ice
cream. It is made with single or double
shot of espresso and vanilla ice cream. It
is easy to prepare. Within 5 minutes, we
can have this dessert con beverage
which is an ideal drink for summer or
after having our dinner.

Instruction: Add a large scoop of frozen gelato. Then pour a hot espresso over it. For
every scoop of vanilla ice cream, use only an ounce of fresh espresso so that the ice
cream will not be drowned. To make a perfect affogato, we have to make sure that we
use hot and fresh espresso.
6. CAFE AMERICANO

Americano - Café Americano is


another type of dark coffee juts like
an espresso giving us the same
caffeine kick. However, this type of
coffee uses espresso infused with hot
water resulting to different flavor from
the traditional coffee.

Instruction: Simply add hot water to a shot of espresso coffee. In a span of 2 to 4


minutes, we can enjoy drinking Americano.
7. CAFÉ LATTE

Café Latte - Café Latte is perfect


with slice of cakes or cookies
originated in Italy. It is made with
1/3 of espresso and 2/3 of steamed
milk which allows us to taste its
creaminess

Instruction: Make our espresso coffee. Pour a milk into a jar and shake the jar as hard
as we can for 30 to 60 seconds in order to create a bubbles. Heat the milk up by putting
it in microwave for 30 seconds in order to foam to rise up. Make sure to uncover the jar.
Pour the espresso in a wide and shallow cup. Put also the steamed milk. Use a large
spoon in order to hold back the foam. Once we are satisfied with the amount of milk we
poured, much the foam next onto the latte. To sum it up, sprinkle a cocoa powder on top
of it. In 5 minutes, we can now have our latte.
8. IRISH COFFEE
Irish Coffee - Irish coffee can mostly
be found in restaurants rather than
in coffee shops because of its
alcohol contents. It is a type of hot
coffee which consists of whiskey,
double espresso and sugar with
thick cream on top. It takes only 10
minutes to prepare this cocktail.

Instruction: Warm the coffee glass and put the whiskey. Then, mix it with sugar and hot
double espresso. In order to dissolve the sugar, we have to stir it well. Once dissolved,
add the thick cream on top of it. Our black coffee with a twist is ready to serve.
9. CAFÉ CUBANO
Café Cubano - This type of coffee originated in
Cuba and is typical to the Cuban drink. This
espresso shot is sweetened once brewed but
twice stronger than the taste of Americano. It
is also used as a base for other drinks and
become part of Cuban daily morning ritual. It
takes approximately 10 minutes to prepare this
dink needing only an espresso shot, 4 to 6
teaspoon of sugar and a cup of water.

Instruction: Add the ground coffee from the dark roasted coffee beans to the
espresso machine. Add sugar in a demitasse cup based on our preference on the
level of sweetness. Normally brew the coffee and let the sugar caramelize and
dissolve well in the drink.
10. CORTADO

Cortado - This type of coffee is a


favorite beverage in Portugal,
Spain, and Latin America. It is
made with espresso and steamed
milk to lessen its acidity. Unlike
macchiato, the milk used in this
coffee is little cooler the
consistency is the same with
latte. It can be prepared within 3
minutes.

Instruction: Simply put the espresso in the cup. Put a warm and frothy milk.
Our cortado coffee is ready to serve.
WHAT IS TEA?
• Tea is the second most consumed drink in the world, surpassed only by
water. An often-surprising fact to tea novices is that all teas (Black, Green,
Oolong, White, and Pu'erh) come from the same plant.
• Tea comes from the plant Camellia sinensis, a warm-weather evergreen.
• Tea is grown around the world in thousands of estates or tea gardens,
resulting in thousands of flavorful variations. Like wines, many teas take
their names from the district in which they are grown, and each district is
known for producing teas with unique flavor and character. While there are
more than 1500 varieties of tea available worldwide, all teas can be divided
into three basic types: black, green and oolong. The way the fresh tea
leaves are processed and their level of contact with oxygen determine the
types of tea. During oxidation, the tea leaves experience natural chemical
reactions that result in distinctive taste and colour characteristics.
TYPES
OF
TEA
1. BLACK TEA
Most commonly used in North American tea bags, black tea is made from fully oxidized leaves, which
produce a hearty deep rich flavour in a colored amber brew. 

Preparation: 100°C / 212°F and steep 4 minutes


2. GREEN TEA
Most popular in Asia, green tea is not oxidized. It is withered, immediately steamed or heated
to prevent oxidation and then rolled and dried. It has a delicate taste, light green colour and is
very refreshing. 

Preparation: 80°C / 185°F and steep 1-3 minutes


3. OOLONG
TEA
The name oolong literally translates as “Black Dragon” and is very popular in China. Oolong teas feature
partly oxidized leaves and combine the taste and colour qualities of black and green tea. Extremely
flavourful and highly aromatic, oolong teas are consumed without milk and sugar. 

Preparation: 80°C / 185°F and steep 2-3 minutes


4. WHITE TEA
White Tea is made entirely from leaf buds that are covered with whitish hairs. The
new budds are plucked before they open,  withered, then dired slowly at low
temperatures. Unlike other tea processing methods, the leaf buds are not rolled
and slightly oxidized. The result is a tea with a mild flavour and natural
sweetness.
Preparation: 80°C / 185°F and steep 2-5 minutes
5. HERBAL TEA
Herbal Tea is not made from the Camellia sinensis plant, but rather an infusion of
leaves, roots, bark, seeds or flowers, it is calming, soothing or invigorating.

Preparation: 100°C / 212°F and steep 3-6 minutes
