Brief background
A trip through time
• Back in the early salad eating days (circa 1st century
CE), ancient Greeks and Romans gathered and layered
raw vegetables, drizzling vinegar, oil, and herbs over top
to create the world’s first salad.

Benefits of Leafy Salad Greens
• Leafy green vegetables are nutrient rich because
leaves contain the light-catching, energy-converting
machinery of plants. Salad greens contain Vitamin A,
Vitamin C, beta-carotene, calcium, folate, fiber, and
phytonutrients
For your information….
 The research provides evidence that a salad a day is
an important starting point, and each additional
serving further improves nutritional status.
 Studies have shown that the U.S. population is
currently not getting enough water-soluble vitamins of
which salads are a rich source.
A ‘salad’ is a single food, or a mix of
different foods accompanied or held
Salads… together with a dressing.

There are 5 different types of


salads:
Appetizer salads
Accompaniment salads
Main course salads
Separate course salads
Dessert salads
Appetizer Salads…
Appetizer salads should be
substantial, but not filling.
Appearance is important, as
this first course sets the tone
for the rest of the meal.
Accompaniment Salads…
Accompaniment salads should
be flavorful and should balance
and complement the rest of the
meal.

A starchy salad, such as a potato or


pasta salad, should not accompany a
main entrée that also contains a
starch.
Main Course Salads…
 A main course salad should be
large enough to serve as a
whole meal.
 It should contain protein
ingredients, such as meat,
poultry, seafood, eggs, legumes,
or cheese.
 It should also contain a variety of
vegetables, greens, and/or fruits.
Separate Course Salads…
 Separate course salads
cleanse the palate after a rich
dinner and before dessert.
 This means they refresh or
stimulate a person’s appetite
for the dessert or next course.
 They are often served in
classic French meals.
Dessert Salads…
Dessert salads are
usually sweet, often
containing fruits,
sweetened gelatin, nuts,
cream, and/or whipped
cream.
Parts of a salad…
The BODY of the salad is the main ingredient

The BASE or UNDERLINER of the salad is usually a


layer of greens.
The DRESSING is a liquid or semi-liquid used to flavor,
moisten, or enrich the salad.
The GARNISH of the salad adds color and appeal, and
sometimes flavor.
Working with salad greens…
Repeatedly plunge greens into cold
water to remove impurities. Dry the
greens as thoroughly and gently as
possible after rinsing.

Tearing greens is preferred over


cutting them with a knife.
Salad dressings…
 The salad dressing is a
liquid or semi-liquid used to
flavor, moisten, or enrich the
salad.
 It should enhance or
complement the salad
ingredients, but not
overpower them.

Balsamic vinaigrette dressing

 This dressing is a classic.


 The kind that we like to shake up and
store in a jar to use later.
 And it works with several different
kinds of salads.

Balsamic vinaigrette dressing
Ingredients:
3/4th cup extra virgin olive oil
1/4th cup balsamic vinegar
Salt
Freshly ground pepper

Method:
 Combine all the ingredients in a jar and shake it vigorously.
 You can also add mustard, garlic, herbs, honey or brown sugar.

Ranch dressing
Ingredients:
1 cup mayonnaise
1/2 cup sour cream or buttermilk
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt
Freshly ground black pepper

Ranch dressing

Method:

Get a large bowl and put all the


ingredients in it. Whisk till they are
combined well. Cover and refrigerate for
30 minutes. Serve cold.

Honey mustard dressing
Ingredients:
1/4 cup + 1 tablespoon Dijon mustard
1/4 cup honey
1/4 cup cider vinegar
1 1/2 teaspoons kosher salt
1/4 cup plus 2 tablespoons vegetable oil

Method:

In a medium to a large bowl, combine the


mustard, vinegar, honey, and salt.
Add the oil gradually while whisking to make the
dressing creamy.
Store in the refrigerator and use it for up to 3
days.

Coconut cream dressing
Ingredients:
1 can cream of coconut
1/4 cup cider vinegar
20 gms of dry Italian salad dressing mix

Method:
Add all ingredients in a small bowl. Keep mixing till the ingredients
are well combined.
Store in a refrigerator and serve chilled.

Apple cider vinegar dressing
Ingredients:
1/4 cup apple cider vinegar
1/2 cup olive oil
2 teaspoons Dijon mustard
1 tablespoon garlic, minced
Sea salt and pepper, to taste

Method:

Add all the ingredients to a blender and blend till


everything is combined. You can also add all the
ingredients to a jar and shake it well. Add salt
and pepper and store it in a jar in the
refrigerator.

Ginger turmeric dressing

Ingredients:
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon turmeric
1/2 teaspoon ground ginger
1 teaspoon honey (optional)

Method:

Mix all the ingredients together till they are


combined and add honey if you want to sweeten
it. Store the dressing in a jar and refrigerate.

Avocado cilantro-lime dressing

Ingredients:
1 avocado, pitted and peeled
1/2 cup plain Greek yogurt
1 cup plain almond milk
1 cilantro bunch, leaves only
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1 tablespoon lime juice

Method:

Combine the avocado, plain Greek


yogurt, fresh cilantro leaves, garlic
powder, sea salt, lime juice, and almond
milk in a blender.
Blend till everything is combined. If the
consistency is too thick, add some more
almond milk.
