Halloween Deviled Eggs Recipe

These spine-chilling Halloween deviled eggs are made to look like scary black spiders have taken over, but they're really perfectly delicious eggs and completely edible. They're easy to make, too. The eggs are stuffed with a simple classic mayonnaise filling, and sliced whole pitted black olives make up the spooky spiders.

Kids will love these eggs, and the adults will appreciate them, too. The classic filling is simple, but feel free to tweak it with your favorite add-ins. Add a few teaspoons of sweet or dill relish or a touch of Sriracha to the egg yolk mixture, or add some fresh chopped chives or minced onion. For a Halloween party or dinner, serve them along with these delightful mummy hot dogs or these meatball monster sandwiches and a bowl of Halloween party punch. Or serve them alongside some other Halloween treats, like these witch finger pretzels and spiderweb cookies.

Ingredients

  • 6 large eggs

  • 1/4 cup mayonnaise

  • 1 teaspoon Dijon mustard

  • 1/8 teaspoon salt

  • 1/8 teaspoon freshly ground black pepper

  • 15 to 20 black olives, pitted

Steps to Make It

  1. Gather the ingredients.

  2. Put the eggs in a medium saucepan and cover them with water, about 1 to 2 inches above the eggs. Place the pan over medium heat and bring to a full boil. Place the lid on the pan and remove it from the heat. Let the eggs stand for 15 minutes.

  3. Transfer the cooked eggs to a bowl of ice water to stop the cooking process.

  4. Peel the eggs under cool running water and then cut them in half lengthwise.  Pop the egg yolks into a small bowl and place the egg whites on a plate or egg tray.

  5. Mash the yolks with a fork and then add the mayonnaise, mustard, salt, and pepper. Mix until well blended.

  6. Fill the egg halves with the egg yolk mixture. Put the filled eggs in the refrigerator until you are ready to decorate the eggs.

  7. Slice the olives in half and set aside 12 halves for the spider bodies. Slice the remaining halves into thin "legs" for the spiders.

  8. Arrange 8 thin legs on a stuffed egg and place an olive half "body" in the center. Repeat with the remaining legs and olives. Move decorated eggs to a container and refrigerate them as you work on the remaining eggs.

  9. Arrange the Halloween eggs on an egg tray or large plate and chill until serving time.

How to Store

  • According to the USDA, boiled—peeled or unpeeled—eggs can safely be kept in the refrigerator for up to 1 week.
  • Refrigerate prepared deviled eggs in a covered container and eat within 2 days. Eggs are perishable and must be kept chilled. If you are taking the eggs to a party or serving them at a cookout, they should be kept in a cooler or served on a bed of ice.

Tips

  • Surprisingly, fresh eggs are harder to peel cleanly, so try to find eggs within about 1 week to 10 days of the expiration date on the carton. 
  • Eggs cooked in the Instant Pot or a similar pressure cooker are easy to peel, whether fresh or a little older. Cook the eggs on high pressure for 5 minutes, then let the pressure come down for 5 minutes. Do a quick release and transfer the eggs to a bowl of ice water.
  • It's always a good idea to boil a few extra eggs, just in case one or two are difficult to peel, plus you can use the extra yolks to make more filling for the 12 egg halves. Discard or eat the remaining egg white halves or mash them with the yolk filling mixture.
  • To keep the stuffed Halloween eggs from wobbling on a plate, cut a skinny slice from the bottom of each egg white half.
