Came here and found it ok, but realize I may have ordered wrong, so hopefully the 3 stars doesn't reflect negatively.
I had the spot prawns, which were decent, but not as special as some of the locals had hyped them up to be. The texture was nice and there was a subtle difference between these and other shrimp I've had in texture. I was a little surprised by how warm they were though. I really enjoyed the fried heads though, nice touch to deep fry the rice below.
I also tried a fish and chips roll, which was fun, but not as good as I had hoped. I enjoyed the crunchy potato on it, but didn't love the mayonnaise sauce sometimes found on these dishes. During our stay in Victoria, we were intrigued by this restaurant's alluring pictures and positive reviews, prompting us to give it a try. Unfortunately, our visit fell short of our expectations. We arrived at 8:30 pm and waited for around 15 minutes to be seated, ending up at the bar. If you're looking for a non alcoholic drink definitely try the LYCHEE WONDER. Starting with the YAKITORI, we were pleased with its delectable taste. However, the HAMACHI CARPACCIO, though fine, disappointed us as it was seared instead of raw. The EBI AL AJILLO turned out excessively oily, and the fried bun was unexpected. The BAO with chashu pork was quite a letdown, with an overwhelming sauce and a thin slice of pork, accompanied by salad. Neither I nor my husband, who usually tries anything I don't eat, could finish it. We concluded our meal with the satisfying DEEP-FRIED BUTA GYOZA, but by then, our appetite had waned, and we decided not to order more food. Our experience was further dampened when our waitress left, and it became challenging to get the attention of other waitstaff. We eventually chose to leave. While unsure if the timing influenced our experience, we can't help but feel that this restaurant is overrated. As foodies who cherish discovering local culinary gems while traveling, we regretfully cannot recommend this particular establishment.

The waitstaff are friendly and efficient and the Miso and Kombucha Croquette were tasty. The rest of the meal fell short, however. The scallop in the Motoyaki was imitation but not mentioned as such on the menu (who eats that stuff?) and the Veggie Crunch and Salmon N Jackson rolls were "meh". We were so disappointed to have chosen those dishes as the table next to us looked to have some real quality seafood in their tapas. Recommendation would be to streamline the menu somewhat and focus on quality products.

Delicious. Innovative. Traditional. Nice wait staff. This place has it all. Several menu items they flame at your table. Unique and fun.
A nice selection of interesting cocktails and some nice sake.

This place is da bomb! I came here for my birthday dinner and it was absolutely delicious:) I want to give a huge thanks to this place for feeding me some real flavorful food and gifting me with some yummy birthday green tea ice cream.
Some great things about Nubo:
I really enjoyed the ambiance here. The music was bumpin but not too loud or out of control. It gave the restaurant a hip vibe. Nubo's menu also has a wide variety of sushi rolls. I literally wanted to try all of the rolls on the menu because they all looked amazing. I sat at the bar and watched the rolls be made and be put out and ready to serve. Each roll is artistically crafted to perfection. Everything I ate for dinner was pretty much picture perfect.

You get so much for the money! The rock and roll roll was great but lacked something like spice. The mango lemonade roll was good but not amazing. They had a great sake collection and great service!

We pretty much exclusively have avocado rolls when we go out to sushi and these have been my favorite yet. The rice was cooked perfectly and they had a good ratio of (ripe) avocado to rice. I also got one of the fancier vegan rolls and it was good as well. Usually the fancier vegan rolls are not worth the price but This one was (although I still think the avocado rolls are the best value.) This is one of those places that you order way more than you can eat because you hope your stomach can hold it all.

Definitely ordered lots here but they were all so worth it! My top picks were their spicy tuna roll (it's not basic AT ALL. It's absolutely delicious melt-in-your mouth type of dish), lucky strike roll, cowboy roll (they sear the beef right in front of you!-super tender and the sauce is absolutely perfect), and the tomahawk roll! If I were to come back to Victoria, Nubo is the first spot I'd visit!

Love the spicy tuna roll and the curry udon - although the miso tastes a bit heavy. Wanna come back for the drinks.
