Mâche is a delicate green also known as lamb’s lettuce, and it’s now available in many Whole Foods stores and other supermarkets in the United States. It has a rich nutritional profile: It is very high in vitamin C, beta carotene, omega-3s and iron (it has even more than spinach). I love the contrast here between the mild, subtle mâche and the sharp, pungent garlic-spiked yogurt.

Ingredients

Yield:Serves 4 as a side salad
  • 14-ounce bag mâche about 5 cups, rinsed and spun dry
  • 1tablespoon fresh lemon juice
  • Salt
  • freshly ground pepper
  • 2tablespoons extra virgin olive oil
  • 3tablespoons thick Greek-style or drained yogurt
  • 1 to 2garlic cloves to taste, halved, green shoots removed
  • Optional: Halved cherry tomatoes
  • Optional: sliced roasted beets
  • Optional: chickpeas

Preparation

  1. Step 1

    Place the mâche in a salad bowl. Whisk together the lemon juice, salt and pepper, and olive oil. Toss with the mâche.

  2. Step 2

    Combine the garlic cloves with a generous pinch of salt in a mortar and pestle and mash to a paste. Stir in the yogurt. Add to the salad and toss. Top with any of the optional ingredients, and serve at once.

Made this last night. Couldn't find the Mache so used Spring Mix and it was brilliant. Family raved about it. So simple. Will certainly make again.

A really great combination salad and so easy to fix. I found that the dressing was a little too sharp for me (homemade yogurt may be to blame) so added a little red wine vinegar to balance it out.

Also works beautifully with butter lettuce. I found it better with one garlic clove. Delicious—already made it twice this week!

For me, 1 clove of garlic was perfect. I did not want to overpower the delicate mache

I love this dressing and make it regularly! Dare I say it’s like a healthy ranch. I find one clove of garlic is plenty and I’m a garlic lover. BTW I’ve never seen Mâche where I live so I’ve tried it with spinach, arugula, and romaine and all are great. Use what greens you like!
