Garlic, cheese and basil on bread is a classic to go with pasta, but this recipe is made on the grill. With few ingredients (and things to carry), it can be a great addition to a campout or cookout. And, despite the utility involved in cooking outdoors, it’s also elegant.

  • Olive oil, for drizzling
  • 2large garlic cloves, halved lengthwise
  • ½cup grated Parmesan
  • Basil leaves, for serving

Preparation

  1. Step 1

    Light a grill or turn heat to high. Drizzle both sides of bread with olive oil and grill for 2 to 3 minutes without turning, until one side is crisp and beginning to char.

  2. Step 2

    Remove bread from grill and rub grilled side thoroughly with the cut garlic. Evenly distribute Parmesan on the grilled side and return toast to the grill, cheese side up. Close lid and cook for another 2 to 3 minutes, or until cheese is melted. Transfer to a cutting board, slice each piece of toast in half and serve garnished with basil leaves.

I rubbed the bread with the oil and garlic and put it on the grill. Then I read the recipe and added the cheese. Didn't read the recipe and it came out okay. I

I've made it with Wegmans Tuscan Garlic bread. Saves a step and tastes wonderful!

Olive oil, garlic, basil, parmesan? Hmmm... same as pesto. Think I'll spread some on the top for the finish.

I've made it with Wegmans Tuscan Garlic bread. Saves a step and tastes wonderful!

Simple and delicious!

We used a baguette (all we had) and sliced it lengthwise. Instead of pressing garlic halves on the bread, we minced the garlic with the olive oil and spread this on top of the baguette halves, placing them on the BBQ, olive oil side down for a minute or two. Then turned the baguettes adding Parmesan, and finally basil off the grill. Very important to clean the grates thoroughly before starting. My family declared this a keeper — thank you Melissa!
