This cocktail was lovely and refreshing, but I recommend making a simple honey syrup. When you put honey into a cold beverage, it hardens, but if you dissolve the honey in a bit of warm water, it blends much better. Just add a little more than the recipe calls for because it is diluted. Or not, you can adjust to taste! I also added a sprig of mint for garnish. Cheers!

This drink is also wonderful with Tom Cat Gin from Middlesex Vermont. It’s made with honey.

switch out the rum for gin and you have a bee's knees! also definitely make a honey simple syrup - 1:1 ratio microwave for 15 seconds

Did it with honey syrup and that worked. I’d be curious to try it with tequila instead of rum. It might add more contrast

Would definitely make a honey syrup or mixing the liquids before adding the ice. Still a good cocktail though.

I put honey in first then the rum and lemon juice and I mix with a spoon until the honey is fully dissolved. Then I add the ice and shake in a shaker.

This is like The Bee’s Knees but with rum instead of gin. We use 1 tablespoon honey (or agave syrup) diluted in 1 tablespoon water, so I guess like simple syrup.

Completely agree with Malissa that the honey hardens when it comes in contact with the ice. I don't think the slightly distinctive flavor of the honey (relative to simple syrup) justifies the extra effort. I'd just go with the simple syrup.
