Preparation

  1. Step 1

    Spread mayonnaise on the top of each slice of bread.

  2. Step 2

    Trim the ends of the cucumber and scrape off the skin and cut the cucumber into thin slices. Arrange the cucumber slices on 4 of the slices of bread. Sprinkle with salt and pepper. Cover with the remaining slices of bread.

  3. Step 3

    Cut away the crusts of each sandwich. Cut each sandwich lengthwise in half.

In Britain, cucumber sandwiches were commonly served for tea when we had guests. First thinly slice cucumbers and marinate in vinegar for an hour. Add a little white pepper if desired. Remove the crusts from slices of a fine white bread (e.g. Pepperidge Farm thinly sliced), spread bread with softened butter (mayo never!), and place slices of cucumber on the bread, cover with another slice, and using a sharp knife, cut each sandwich in half.

Thanks for sharing this one. A thin layer of chopped watercress adds spark. Mayonnaise is too strong for the delicte flavor of cucumber, and it just isnt done, lol.

Marinating in vinegar sounds good, but adding sugar, stirring till dissolved, and watching the timing when first tried to achieve just a whisper of the marinade is good too.
