You may not have a grill or the weather may not be cooperating, but you can still revel in this childhood favorite, and it's a brilliant way to make s'mores for a crowd. Also brilliant: melted chocolate is spread on both of the graham crackers for each s'more, so the chocolate envelops the marshmallow with each bite. —Florence Fabricant

Preparation

  1. Step 1

    Preheat broiler. Cover small baking sheet with foil, and lightly oil the foil.

  2. Step 2

    Put graham crackers top side down on a cutting board or another baking sheet. Slather each graham cracker with chocolate.

  3. Step 3

    Put marshmallows on the foil-covered baking sheet, and broil a few seconds, until tops are browned. Turn over to brown the other side.

  4. Step 4

    Put a toasted marshmallow on half of the chocolate-coated graham crackers. Top each with another graham, chocolate side down, and serve.

I make indoor s’mores with Nutella and marshmallow fluff. Delicious

You can make s’mores ‘nachos’ by breaking apart graham crackers and using mini marshmallows and chocolate chip: same technique with a few moments under the broiler!

I have made indoor s’mores using the wick chafing fuel, Sterno as the heat source. No oven required. A fun activity if done safely. Can also be made in your toaster oven. Pinterest has lots of ideas for these summery treats.

I've been making s'mores in the microwave, first melting the chocolate chips on the graham crackers then adding a marshmallow. You have to stand at the microwave and watch so the chips don't burn and when putting the marshmallows on they blow up quickly. My grandkids love them and so do I.

Try a layer of peanut butter on the graham crackers. The sweet is not so overwhelming and there's an extra protein boost.
