SFSU Dining Unveils "Gator Grub" to Fight Food Insecurity

San Francisco State University's Dining Services launched an exciting new initiative, "Gator Grub," to tackle food insecurity among students

San Francisco State University's Dining Services launched an exciting new initiative, "Gator Grub," to tackle food insecurity among students. In addition to addressing this critical issue, the program aligns seamlessly with the ongoing Waste Watch by Lean Path initiative in which waste is weighed in the campus kitchen, tracked by category, and reviewed on a regular basis to understand waste and identify an action plan for reduction.

Gator Grub Highlights:

  • Weekly Food Donations: Every Friday, from 5:00 PM to 5:30 PM, surplus food from City Eats will be made available to students facing food insecurity. This effort not only reduces food waste but also ensures that nutritious meals reach those who need them most.
  • SFSU App Alerts: To keep students in the loop, push notifications will be sent through the SFSU app, providing timely information about the availability of donated food. This ensures a quick and convenient way for students to access these resources.

Adding to the excitement, SFSU Dining Services welcomes Oleander Nielsen as the newest member of the team. Oleander, a first-year student majoring in environmental studies and minoring in queer and trans ethnic studies, brings a fresh perspective and boundless enthusiasm to the role of Sustainability Intern.

A dynamic and engaged student, Oleander is a chess club enthusiast and a passionate artist. They will lead the charge on both the waste watch and Gator Grub initiatives, with a keen focus on reducing the environmental footprint around City Eats.

"As we launch Gator Grub, we're not just reducing food waste; we're creating a stronger, more supportive community at SFSU," said HeeBong Hyun, MS, RD, General Manager at SFSU Dining Services. "Oleander's energy and dedication will undoubtedly inspire positive change on our campus."
