Yellow Slime On Ice, Roaches On Cook Line Reported At Rockville Eatery

Inspectors found critical health violations at food preparation areas at three Rockville food establishments.

ROCKVILLE, MD —Inspectors with the Montgomery County Health and Human Services Department recently cited three Rockville food establishments with critical violations.

At one restaurant, the inspector reported seeing roaches on the racks beside the kitchen cook line and a yellow slime in the ice machine.

All Montgomery County licensed retail food establishments are inspected by the Licensure & Regulatory Services Program. Regular comprehensive inspections include evaluating an establishment's sanitation, maintenance and food service operations. These inspections include monitoring critical temperatures and food handling procedures.

Both of the restaurants that inspectors visited on Sept. 19 and Sept. 21 were cited for critical violations of food safety requirements.

"A Critical Violation means a food safety requirement that requires immediate correction," according to the health and human services website. "Failure for immediate correction results in cessation of some or all food operations or closure of the facility until violation is able to be corrected."

Amore Eats

During a Sept. 25 inspection of Amore Eats located at 1900 Rockville Pike in Rockville, an HHS inspector cited the restaurant with multiple violations including one critical violation that needed to be fixed immediately

The critical violation concerned food being kept at the incorrect temperature. The inspector reported sausage on the stem table being kept below 135 degrees F, when it needed to be higher than that temperature. This was corrected while the inspector was at the restaurant.

The inspector also noted meat boxes being stored on the floor under the hand washing sink. The restaurant corrected the violation, according to the report.

The following are other violations noted in the report that Amore Eats needed to address:

  • "Improper thawing method observed. Meat loaf observed thawing in standing water in the 3-compartment sink.
  • "No paper towel at the hand washing sink. Provide as required.
  • "Single serving bowls and plates observed stored on the floor in the serving area.
  • "The handle of the walk-in cooler door observed broken. Plastic is being used as an handle. Repair.
  • "Wet wiping cloths observed not stored in sanitizer solution in between uses on the prep table. NOTE: Store in sanitizing solutions in between uses.
  • "Dust on the pipes and ceiling in the walk-in refrigerator. Clean.
  • "Floor under and behind the equipment in the cook line and 3-compartment sink area observed unclean. The damaged wall observed under the wash chamber drain board. NOTE: Clean and repair as required.
  • "Heavy grease buildup observed in the hoods. Clean.
  • "Gender neutral sign is not on the single use restroom doors. NOTE: Provide as required."

A followup inspection was expected to occur within two weeks to confirm if the above items have been addressed.

Mosaic Cuisine

Mosaic Cuisine located at 186 Halpine Road in Rockville had one critical violation involving food not being separated and protected from adulteration, spoilage, and contamination, according to a Sept. 27 inspection report.

In addition, the HHS inspector noted a total of nine violations at Mosaic Cuisine. The following violations were corrected during the inspection:

  • "An employee observed touching ready-to-eat waffle in bare hands. Waffle was voluntarily discarded.
  • "Shelled raw eggs observed above 45 degree F. Eggs were voluntarily discarded.
  • "Marinated vegetable observed placed on a tray on the trash bin in the dishwashing machine area. (Corrected on site)
  • "A couple of squeeze bottles observed with mold buildup on them. The bottles were removed for cleaning."

The following good practice violations needed to be addressed and corrected, within 30 days, according to the inspection report:

  • "Mold observed on the wall in the walk-in refrigerator. Clean molds in 7 days.
  • Wet wiping cloths observed not in sanitizer solution in between use.
  • A couple of roaches observed on a rack besides the oven in the cook line.
  • NOTE: Remove pest activity completely from the facility. According to the operator, Pest control people comes every other Mondays.
  • Yellow slime observed in the ice machine. Clean within 24 hours.
  • Gender neutral sign is not on the single use restroom doors. NOTE: Provide as required.

Rockville High School Booster Club Snack Bar

An HHS inspector identified one critical violations during an Sept. 29 inspection of the Rockville High School Booster Club Snack Bar at 2100 Baltimore Road in Rockville.

The critical violation concerned the hot holding temperature of potentially hazardous food being sold at the snack bar.

While the grilled chicken was being kept at the minimum temperature of 135 degrees F, the hotdogs were 10 degrees lower than the required temperature to ensure food safety. The inspector recommended that additional foil needed to be added around the chaffing dishes to concentrate the heat.

The following issues needed to be addressed and corrected, according to the inspection report:

  • Mold was present on the interior of the ice maker door. The unit should be cleaned.
  • The hand sink was blocked. To remedy this situation, the rack that was being stored in the sink needed to be removed.
  • The broken floor drain cover in the kitchen needed to be replaced.
