On the surface these recipes can seem somewhat complex due to technique and use of ingredients like emulsifiers and stabilizers, which are not usually used by home cooks.
The section on ingredients toward the back of the book explains exactly what these ingredients are and what they do, demystifying them and making you realize these dishes are not as difficult as you might think. I get why this section is toward the back as sometimes having the get through the technical details before reaching the recipes can be a deterrent. But unfamiliar ingredients can also deter a cook from trying a recipe, so flip to the ingredient section to get a handle on everything before diving in to the recipes.
