CAMP VEGGIE CURRY

In the mood for something fresh, nourishing, and a bit different? Seth’s one-pot veggie curry is always a crowd-pleaser, full of bright, beautiful flavors and fragrant Indian-spiced vibes. Featuring an ingredient list that lets you use up leftover veggies from other meals, it’s a quick camping lunch that gets you on your way and leaves no trace. Let’s cook!

Ingredients

2 Tbsp. curry powder or garam masala

½ cup water

2-3 Tbsp. cooking oil

3 cloves garlic, chopped

1 medium onion, chopped

2-3 cups vegetables, chopped (carrots, cauliflower, broccoli, green beans, or whatever else you have on hand)

1 cup sour cream or plain yogurt

Salt and pepper to taste

Instructions

1. In a pot, add oil over medium heat.

2. Mix curry powder and water in a mason jar or small container, then add to pot and stir.

3. Once the liquid is heated through, add the veggies and sauté until they’re about “half cooked.”

4. Add sour cream or yogurt and stir until curry thickens. Salt and pepper to taste.

5. Simmer until vegetables are cooked all the way through.

6. Serve a hearty portion over rice.

Mix dry ingredients before you leave

Instead of making a mess trying to measure and mix dry ingredients at the campsite, simply do it at home and have it ready to go in a resealable bag.

Create a pocket-sized spice rack

Instead of wasting valuable packing space with individual jars of spices, separate them out into the compartments of a pill organizer instead.

Make use of those leftovers
