Ingredients
Yield:About 1½ cups
- 1large egg yolk
- 1tablespoon Dijon mustard
- 1tablespoon white-wine vinegar
- Salt and freshly ground white pepper to taste
- 1cup vegetable or olive oil
- 2tablespoon minced scallions
- 2tablespoons minced fresh chives
- 2tablespoons minced parsley
- 2tablespoons minced fresh basil
- 1tablespoon minced fresh tarragon or any fresh herb of your choice
- ½teaspoon chopped garlic
Preparation
- Step 1
Combine the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl.
- Step 2
Add the oil in a thin stream while beating vigorously with a wire whisk. When the mixture is thick and smooth, stir in the scallions, chives, parsley, basil, tarragon and garlic and blend well.
