  • ¾cup cornmeal
  • ½cup flour
  • 2teaspoons baking powder
  • 1egg
  • ¾cup milk
  • 2cups corn kernels
  • Add milk if needed
  • Garnish

Preparation

  1. Step 1

    Put neutral oil in a skillet on medium heat.

  2. Step 2

    Combine ¾ cup cornmeal, ½ cup flour and 2 teaspoons baking powder.

  3. Step 3

    Beat 1 egg with ¾ cup milk; pour into dry ingredients along with 2 cups corn kernels.

  4. Step 4

    Add milk if needed.

  5. Step 5

    Drop spoonfuls into the oil; brown on both sides, 4 to 5 minutes total.

  6. Step 6

    Garnish: Parsley.

The basic proportions of this recipe produce an excellent corn cake, but on its own, it does produce a bland product. I added salt and pepper, and would add some cayenne next time. Also, I fried them in bacon fat, which added a lot.

this recipe can only serve as a base as it is pretty bland. next time will add jalapeno, SALT, and possibly cheese.

Delicious and quick -- some of us ate them with yogurt and cilantro; others with maple syrup. Next time I'll add some salt to the batter, and perhaps some chopped jalapenos.

Added 1/4 tsp chipotle purée and 2 scallions. Next time make it 1/2 tsp chipotle purée and a few more scallions. Added 1/4 tsp salt and fair amount white pepper. Enough of both. Recipe makes a lot, plenty for 4 people. Made 14 pancakes.

What is the yield? I'll be making 1/2 a recipe for two.
Sounds a lot like my PA German MIL's corn fritters! will be making today. Add a little sugar, serve with syrup is how she'd do it. Or make with chopped apples.

Add some sugar, serve with syrup, and you've got corn fritters - great for brunch. Alternatively, add pepper jack, a little hot sauce and serve with salsa. Absolutely add salt to both versions, without it you've got blah . . . Skip to super easy; omit the cornmeal (makes it grainy) and use Bisquick. Follow the ratios on the box. You don't need to add salt to this. If you let the batter stand a while, it gets thicker. That's when you add the milk (or not).

Trying to understand the absence of salt in this recipe? Verrrrry bland.

Great vehicle for leftovers. I added a handful of grated cheddar, some coarsely chopped green beans, and red pepper flakes. (Also, as everyone has already pointed out, salt.)

Wisconsin German corn fritters … serve with butter and real maple syrup to taste … my Milwaukee German mom came from a farming family and always served one dinner a summer of nothing but corn fritters made with corn fresh off the cob. I never knew how she made this childhood favorite until I found this recipe …

I don't know how anyone would eat these without a bunch of salt and cheese added. I did what a lot of commenters said and added salt and cheese and it was still somewhat bland. I think more spices may help.

Read the reviews before I made it. Added a teaspoon of salt, 1/4 c. honey, and 1/3 c. of cheddar cheese. Maybe it was bland before, but now it’s heaven.

Add a handful of chopped scallions and you won’t be disappointed. Serve it up with some pinto beans and hot sauce.

A great basic recipe. I did use masa instead of corn meal, and I added chives, salt and pepper. And I cooked them in bacon fat. I made 8 cakes, about three inches in diameter. Looking forward to making these again with additional mods.

A great basic recipe. I added some salt, minced scallions, chopped parsley and a few bits of bacon. I can see adding your own flavor twist to these: peppers, cilantro, herbs. I used leftover sweet corn, simply cut it off the cob.

They are ... meh. And a bit dry. I loaded them with a fresh tomato salsa and avocado and that really helped. I think cooking in bacon fat would have made them better.

Reading the comments, I adjusted the recipe, it needs salt and flavor. Add finely chopped scallions and 1/2 to 3/4 teaspoon of salt. I used 1/2 teaspoon of salt and then topped them with salted butter. They were delicious served with very flavorful pinto beans.

For sweeter cakes, I added a teaspoon of sugar, teaspoon of salt and half a lemon to make them a little fluffier; didn't have corn kernels. Came out delicious!

I added 1t allspice and 3/4c blueberries reducing the corn to 1 1/4 cup. plus 1T sugar & 1/4t salt. Delicious (no parsley) Note: Look for as locally grown corn meal as you can find as luckily I can get fresh local organic corn meal from Maine that is just wonderful- so full of corn flavor
