  • 1egg yolk
  • 1teaspoon Dijon-style mustard
  • 1tablespoon white-wine vinegar, preferably champagne vinegar, plus more as needed
  • Juice of one lemon, or to taste
  • 1teaspoon finely minced garlic
  • 1tablespoon finely chopped shallots
  • ½teaspoon sugar
  • ½cup walnut oil
  • ½cup peanut oil
  • Salt to taste, if desired
  • Freshly ground pepper, preferably white, to taste
