  • 3tablespoons butter
  • ½cup finely chopped onions
  • ¼cup slivered blanched almonds
  • ½cup finely chopped green pepper
  • ½cup finely diced, thinly sliced cooked ham
  • Salt to taste if desired
  • Freshly ground pepper to taste

Preparation

  1. Step 1

    Rinse and drain the rice. Bring the water to the boil and add the rice. Let boil until rice is tender, about 17 minutes. Drain thoroughly.

  2. Step 2

    Meanwhile, heat 2 tablespoons butter in a heavy saucepan and add onions and almonds. Stir and cook until mixture is lightly browned. Add green pepper and ham and cook, stirring, about 5 minutes.

  3. Step 3

    Add the rice to the green pepper mixture and stir in remaining one tablespoon butter, salt and pepper. Stir to blend well. Cook 5 minutes, stirring.
