Ingredients
- 2tablespoons olive oil
- 4cloves garlic, finely minced
- 1cup finely diced white onion
- 1cup finely diced celery
- ½cup finely diced green bell pepper
- ½cup finely diced red-bell pepper
- ½cup dry white wine
- 1cup chicken stock
- Cayenne pepper
- salt and freshly ground black pepper to taste
- 1tablespoon minced fresh thyme or 1 teaspoon dried
- 1tablespoon minced parley
- 4cups seeded and chopped tomatoes
Preparation
- Step 1
Heat oil in saute pan.
- Step 2
Add garlic and heat. Then add onion, celery, green and red peppers and saute lightly.
- Step 3
Stir in wine and stock and bring to simmer. Add remaining ingredients and cover. Simmer for 20 minutes. Adjust seasoning. If made ahead, reheat.
