  • 1tablespoon extra-virgin olive oil
  • ¾cup couscous
  • 2tablespoons finely chopped parsley
  • ½tablespoon minced chives
  • Salt and freshly ground black pepper

Preparation

  1. Step 1

    Bring the stock and oil to a boil, stir in the couscous, remove from heat, cover and set aside for five minutes.

  2. Step 2

    Fluff with a fork, fold in the parsley and chives, season to taste with salt and pepper and keep covered until ready to serve.

Did this with pearl couscous. Great side dish. Lots of herbs.

So easy to make and really delicious!

Nice side dish. Fluffed up nicely. I liked that it could be made a bit in advance.
