Preparation

  1. Step 1

    Preheat oven to 400 degrees.

    Cut the potatoes into ½-inch wide strips; mix oil with hot pepper flakes, salt and pepper, and toss the potatoes to coat evenly. Place the potatoes on one or two baking sheets, and bake for 15 to 20 minutes; then, turn and roast for another 15 to 20 minutes, until they turn golden on all sides.
