    Recipe: ​The dessert to put on your menu this Diwali

    Diwali season is all about indulging your sweet tooth. From chocolates to Indian sweets, the market is flooded with desserts of all kinds.

    But if you want a break from store-bought sweets, or want to add something different to your Diwali party menu, there is nothing like old-school homemade mithai.

    Jaypee Greens Golf & Spa Resort's ​Chef Shivanand Kain's easy sev ki barfi recipe is pure happiness.

    Sev ki barfi

    Ingredients:
    Gram flour: 500 gm
    Deshi ghee: For frying
    Milk (full cream): 2L
    Khoya: 1 kg
    Cardamom powder: 10 gm
    Rose water: 5 ml
    Kewra water: 5 ml
    Saffron: 1 gm
    Almond flakes: 10 gm
    Pistachio flakes: 10 gm

    Method:
    - Mix gram flour in 200 ml milk, 200 ml water and knead to form a hard dough.
    - Make thin noodles (sev) of the dough using a noodle maker.
    - Fry in desi ghee till crisp.
    - Pour the remaining milk in a deep pan and reduce till 2/3.
    - Add in the grated khoya. Cook till it boils.
    - Add the sev, kewra water, rose water and cardamom powder. Mix well.
    - Turn off the flame. Let the mixture stay in pan for 10 minutes, till the sev get soft.
    - Grease a sweet dish tray.
    - Put the mixture on it and garnish with pistachio and almond flakes.
    - Let it set for half an hour.
    - Cut into desired shape. Let it set for 2 hours.
