Hey there! Once the starter is established and predictable in its behavior, you can store it in the fridge and take it once a week to feed it or get it ready to bake with. To prepare for baking with it, you'll want to feed it two or three times before using it so that it's bubbly and just about doubling in size with 6 to 8 hours of being fed.
