hi! i am intending to bake bagles. Im not sure if this schedule works;
-knead, proof 1st rise and shape in the evening before (6-7pm)
- second rise in fridge overnight
- bake around 2-3pm the next day.

Please advise and if there're any things i should look out for, thank you!
