  • 2ripe papayas, peeled, seeded, and diced
  • 1cup blueberries
  • 1tablespoon slivered fresh mint leaves, plus mint sprigs for garnish

  1. Step 1

    Mix together the lime juice, honey and ginger in a large bowl. Add the fruit and slivered mint leaves, and toss together. Serve, garnishing each bowl with a sprig of fresh mint.

Loved the flavours in this! Be sure your papaya is ripe… ours was a bit underripe and the sweetness didn’t come through as well as it would have. The mixture of lime, ginger, honey and mint is so balanced and refreshing.

Nice but feels more like a dessert

Used ginger preserves instead of crystallized ginger. Tasted great

Substituted maple syrup for honey and was still outrageously good

This dish is great. You don’t need the crystallized ginger at all. The mint makes it.

I used a medium sized melon baller to scoop out papaya instead of dicing in chunks. This is a great recipe for a weekend brunch crowd.
