  • ½pound lean country smoked ham
  • 3medium-size carrots
  • ½pound green lentils
  • 2tablespoons butter
  • 1cup finely chopped onions
  • 1tablespoon finely chopped garlic
  • 2tablespoons curry powder
  • 5cups fresh chicken broth or canned
  • 2cups water
  • 1bay leaf
  • 3sprigs fresh thyme or 1 teaspoon dried
  • Salt to taste
  • 1tablespoon red-wine vinegar
  • 2tablespoons finely chopped coriander

Preparation

  1. Step 1

    Remove most of the fat from the ham and cut into ½-inch cubes.

  2. Step 2

    Trim and scrape the carrots and cut them into ¼-inch cubes.

  3. Step 3

    Pick over the lentils, wash them and drain into a colander.

  4. Step 4

    Heat 1 tablespoon of the butter in a kettle or saucepan. Add the ham, carrots, onions, garlic and curry powder. Cook briefly over medium heat, stirring, until the onions are wilted.

  5. Step 5

    Add the lentils, 4 cups of the chicken broth, water, bay leaf, thyme and salt. Bring to a boil, and simmer for 24 to 30 minutes, stirring occasionally.

  6. Step 6

    Remove one cup of the soup, with more lentils than liquid, and set aside. Discard the bay leaf and thyme sprigs.

  7. Step 7

    With a potato masher or wire whisk stir the soup briskly to mash the lentils, and return the soup to a boil. Add the remaining cup of chicken broth, the reserved lentils, the vinegar and the remaining butter. Check for seasoning and serve, sprinkled with the coriander.

Very good. And I thing it would be just as good without the ham.

Loved this. Added a cup of pureed butternut squash, then mixed with immersion blender. Also added some chopped lacinato kale at the end (5 min simmer). So good!

Used mild Italian sausage and a little smoked paprika. Not as much water. Very good and hearty.

I make this with a pound of ground turkey instead of ham, increase the curry powder and add 1/2 cup whole wheat macaroni. It is DELICIOUS.

Yum! Because of a snowstorm and COVID isolation I used orange lentils. Added a couple potatoes and a sweet potato. It broke down enough in the cooking time that blending wasn’t needed. Loved this!

Great flavor. Substituted sweet potato for carrots and added a couple stalks of celery. Vinegar was overpowering at first. I would recommend reducing to 1 tsp and make sure you let it cool a little before serving. But it does add another level of flavor so I wouldn’t totally eliminate it.

Loved it! Used leftover ham from Thanksgiving and added chopped kale along with the broth and lentils just to bulk it up a bit. Will definitely make this again.

Loved this. Made this yesterday to use up smoked ham I had leftover from thanksgiving and it was better then I thought it would be. I think it would be good without, but not as good. I think folks who said that are not using highend smoked ham from a butcher. Also I didn't have any issues with the lentil not breaking up, I didn't even wisk, but simmered longer. I did add some cubbed zuchini at the very end based on other reviews to add more veg and liked it. I'd add even more next time

Good ratios for a lentil + meat soup. Used Bittman's curry powder blend from How to Cook Everything as the curry powder.

This is good but agree with notes suggesting more vegetables. I used an immersion blender and it worked well except a bit weird as it shredded some of the ham. Tried mashing before using the blender but didn't work. Question-- why hold back 1 cup of chicken broth for the end? Odd. I did add extra curry powder and doubled the ham cubes. Also, isn't fresh coriander actually cilantro?

I added 2 stalks of celery to increase the vegetable content, which was a nice addition.

I used Penzeys Turkish blend instead of curry powder. Delicious.

B+ tasty! used less water so soup became stew--did not mash up the lentils and it was still really good

Good recipe. Cooking at 8000ft, and subbing french green lentils because it's what I had, had to extend the cooking time a bit for tenderness. I might up the veggies by adding some spinach or other greens toward the end. My curry powder was quite pungent, so I think the amount depends on which kind/brand you use. Lots of cilantro was bomb.

I added collard greens about 15 minutes into simmering and it added a really nice bite. Also, like others, agree the immersion blender is the way to go.

This soup is excellent! Much better than expected - maybe our favorite lentil soup ever.

Easy and good. Made toasted croutons to sprinkle on top. Served with tossed salad. Light but filling dinner.
