Shrimp With Snow Peas and Tomatoes

Ingredients
- 1¼pounds medium-sized shrimp, peeled and deveined
- 3tablespoons fresh lemon juice
- 1tablespoon grated fresh ginger
- 2tablespoons black-currant vodka or other flavored vodka
- ¼teaspoon red-hot pepper flakes
- Salt and freshly ground pepper to taste
- ½pound snow peas
- 4ripe plum tomatoes
- 2tablespoons butter
- 2tablespoons olive oil
- 1tablespoon finely chopped garlic
- 2tablespoons finely chopped coriander or parsley
Preparation
- Step 1
In a bowl combine shrimp, lemon juice, ginger, vodka, pepper flakes and salt and pepper to taste. Blend well. Cover with plastic wrap, let stand for at least 15 minutes.
- Step 2
Pluck off and discard the ends of each snow pea.
- Step 3
Drop tomatoes into a pot of boiling water, let stand about 10 seconds. Remove and peel. Cut away cores, then cut tomatoes into ½-inch cubes.
- Step 4
Melt butter and olive oil in a large nonstick skillet over high heat. Add snow peas. Cook, stirring occasionally, for 30 seconds. Add tomatoes, cook for one minute, continuing to stir. Add garlic, shrimp and marinade. Cook about 3 minutes; do not overcook. Check for seasoning. Add coriander, blend well and serve immediately.

This is very good! I used cherry tomatoes and just put them into nonstick skillet with butter and oil, cooked for about 5-7 minutes until they burst with a little stabbing. Then added Roma beans as the farmers market didn’t have snow peas and cooked for a few more. Then added garlic (increased) and shrimp that had been marinated per instructions. Added teaspoon of sugar before stirring in parsley. One skillet meal! Will make again.
