  • 5Idaho or Washington potatoes, about 1½ pounds
  • Salt to taste
  • 2tablespoons unsalted butter
  • 1⅓cups milk
  • cup finely chopped scallions
  • Freshly ground white pepper to taste
  • teaspoon freshly grated nutmeg

Preparation

  1. Step 1

    Peel the potatoes and cut them into 2-inch cubes. Place the cubes in a saucepan. Add water to cover and salt.

  2. Step 2

    Bring to a boil and simmer 15 minutes, or until tender. Drain and put the potatoes through a food mill or mash them well with a potato masher. Add the butter and beat to blend. Stir in the milk, scallions, salt, pepper and nutmeg. Serve piping hot.

Way too much milk for 1.5# of potatoes. Flavor was great, though. Next time, I'll scale back the liquid so it's less soupy.
