ASHBURN, VA — Numerous restaurants in the Ashburn and Sterling area recorded violations during health department inspections between May 1 and 8.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

Here are the most recent restaurant inspections in and around Ashburn and Sterling, according to the Loudoun County Health Department. Of note, Tommy's Place in Sterling had 14 violations, including a fuzzy substance on pico de gallo and several food mixes.

Violations:

  • The person in charge (PIC) is not maintaining active managerial control of the facility.
  • PIC found blank employee health policy forms. None of the employees on premises have signed the policy.
  • Observed no handwashing signage by handwashing sink at male and female restrooms.
  • Observed no handwashing cleanser by dishwashing area.
  • Observed fuzzy white and green substance on pico de gallo, corn flour mix and cheese and bean mix. PIC voluntarily discarded the stated items.
  • Observed raw shrimp, beef and chicken stored over tomatoes and lettuce in the walk in cooler. PIC relocated food to protect food from cross contamination.
  • Observed low temperature dishwasher not properly sanitizing, registering at 0 ppm.
  • Observed improper cold holding temperature in prep cooler: Pico de gallo 54F and cut cabbage with vinegar 54F. Food was left in prep cooler since Sunday night. PIC voluntarily discarded stated items.
  • Observed time/temperature control for safety foods (TCS) not properly dated for disposition. Food not labeled are: raw marinated shrimp, raw marinated beef, raw marinated chicken, cut cabbage with vinegar, pico de gallo and pickled onions. Employee date marked the stated items since the food was prepped 6/22/2024 according to the employee.
  • Observed a pot of bean on the floor in walk in cooler. PIC relocated stated item to a shelf in walk in cooler.
  • Observed female restroom with receptacles with no cover.
  • Observed several light bulbs out by dishwashing area.
  • Observed service date sticker of hood to be service on 2/2024. It has not been serviced since then.
  • Observed several hookahs stored by bar and two hookahs in kitchen by dishwasher area.

Ashby Ponds - Potomac and Black Rock Bistro: 44815 Audubon Sq Ashburn, VA 20147

Violations:

  • Observed no handwashing signage in restrooms that employees use.
  • Observed no hand drying provision for the bar handwashing sink. Person in charge (PIC) refilled towel dispenser.
  • Observed improper cold holding temperature in prep coolers: cod fish 48F. This was held in prep cooler overnight. PIC voluntarily discarded the cod fish.
  • Observed small round dish in bulk sugar container. In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. Person in charge remove small dish.

  • Observed multiple TCS food items cold holding out of temperature in the tall reach-in cooler. Foods included grilled chicken breast 56, hot dogs 55, sliced turkey 56, sliced salami 55, sliced ham 52, and turkey wraps prepared on 6.25.2024 at 47.
  • Tall reach in cooler reads 39 F on external display despite internal ambient air thermometers reading 45/46 F. All TCS food temperatures verified from 47 F to 56 F.
  • Test strips for quaternary ammonia sanitizer expired May 1. 2024.

  • Beef Empanadas 70F, ham & cheese empanadas 69F and a container of cut mango 54F, were found stored on a counter and temped at improper temperature. Person in charge (PIC) moved all three items back to refrigeration to rapidly cool. EHS discussed the use of time as the public health control as an option.

  • Observed no handwashing signage by handwashing sink at bar upstairs and drink serving area.
  • Observed food debris in handwashing sink in prep area by ice machine.
  • Observed potato slicer with accumulation of potato debris. Person in charge had slicer washed rinsed, and sanitized.
  • Observed improper cold holding temperature in prep coolers: sliced tomato 45F, sliced chicken 56F, Cole Slaw 50F, cut tomatoes 45F, Spring mix 44F, marinara sauce 50F, diced chicken 45F and buttermilk batter 64F. PIC placed items in walk in cooler to cool down rapidly. Cole slaw, sliced chicken, pizza sauce and buttermilk batter were voluntarily discarded.
  • Observed cooking utensils in water at 80F and knives in sanitizer water. Person in charge remove knives from bucket and changed the water for cooking utensils.
  • Observed no chlorine test strips for low temperature dishwashing machine at bar. PIC will place order for strips.

Ledo Pizza: 21005 Pigeon Dr Potomac Falls, VA 20165

Violations:

  • EHS observed minimal date marking of foods within the facility. Packages/containers of cooked deli ham, cooked diced chicken, cooked chicken wings, cooked ground beef, cut lettuce observed with no date marking.
  • EHS observed severe rusting on the bottom of the exit door to the back/outside area. Light is able to be seen through the door in rusted areas, and at the bottom. Door is no longer able to secure the facility from outside rodents/insects etc.

Yen's Cafe: 43490 Yukon Dr #113 Ashburn, VA 20147

  • An unlabeled spray bottle with a yellow contents was found in the back prep area of the kitchen. EHS confirmed that the contents was degreaser.
  • Three pre portioned plates of salad observed stored directly on top of ready to eat (RTE) foods in the flip top cooler on the cook line. Plates of salad were immediately removed.
