"What is Mazesoba?" Mazesoba, literally translated as mixed noodle - soupless ramen. Japanese Chef Takuma Ishikawa created KOKORO mazesoba in Tokyo Japan in 2013. Soon Mazesoba becomes extremely popular in Japan and scattered in major Japanese cities, especially in Tokyo where KOKORO brand founder Takuma Ishikawa started his business and won the Best 2014 Mazesoba Award in Japan. Over the years, many tried to imitate the taste but nothing tastes as good as the origin of mazesoba by Chef Takuma. We make all soba noodles with multi-grain flour in house daily & we use Japanese technology to soften the water How we make our Soba Noodle to perfection Mazesoba, literally translated as mixed noodle. is ramen without soup, It has spicy hot minced pork, raw egg yolk, seaweed, Chashu, Green onion, bamboo shoot, minced garlic etc. on top. Never had anything quite like this savory, velvety bowl of noodles, and I'm so happy I tried it! The waitress recommended the Niku Mazesoba and it was delicious. I also got the green melon milk drink as it was BOGO free, it was nice and sweet and definitely something a child would love.
As for the noodles, think of it as a Japanese carbonara, with a nice coating on the noodles from the egg yolk as well as a bunch of aromatic mix ins like seaweed, garlic, and green onion. Add vinegar to cut the fattiness of the noodles and add some acidity.

We swung by this place before a concert, and let me tell you, our appetites were on fire!
But get this, they serve ramen, but you wouldn't want to miss on their specialty!!! They're all about this thing called mazesoba.
Think dry ramen, but with thicker noodles that'll give your jaw a workout, kind of like udon. And here's the kicker - you can upsize your bowl for free! I went for the vegan mazesoba minus corn, and while it had a tangy tomato sauce vibe, a dash of chili flakes and oil gave it the kick I craved.
We weren't playing games, so we ordered up four rounds of the spicy mazesoba(a special - close to the Niku mazesoba), and let me tell you, they hit the spot! Bursting with flavor, each bowl left us wanting more. And to top it off, we dove into some Tokyo mazesoba and some seriously tasty ninja gyozas that vanished in seconds.
Overall, this joint serves up a unique noodle experience that's perfect for fueling up before a big event. Sure, mazesoba might be a bit different, but hey, isn't that what makes it fun? Came here after the line at Danbo next door was way too long. The interior is actually quite spacious with some cool paper lanterns to give kind of a street vibe. The service is super friendly, and the server checked on us frequently.
Food here is a bit unusual because their specialty is mazesoba. Mazebo are like a dry ramen, except instead of ramen or even soda noodles, the noodles are a bit thicker and chewing, more like udon. With every noodle bowl, you can choose regular, XL or XXL for free. We chose the XXL. You also can get a free bowl of rice to soak up any extra sauce, if needed. We did not need it as the XXL portion is a lot of food already. The options are very similar, except for the veggie option. But there are slight variations, for example, spicy or not spicy, having a boiled egg, chashu vs. ground meat, etc. I would describe the flavour as very umami, and the spicy bowl definitely had a more seafood flavour. On the table, there's also red pepper and vinegar to customize the spice and saltiness level. I found the vinegar actually made a substantial difference. Sooooo good. Simple and yet such a flavor bomb. You gotta get the Zenbu mazesoba! It comes with a little bit of everything. You can also upgrade to XL or XXL for free. Would be great to save for another meal!
You can add vinegar to the sauce to help with the heaviness. Also, towards the end of the meal they ask if you want rice to mix with the remaining sauce.

My partner has been raving about this restaurant so when we visited Canada, we knew we had to go together. The place itself was so cute and simple. Staff were super friendly and attentive to our needs.

I was recommended this place by a friend while I was in Vancouver, so I came here for dinner by myself.
It was around 7pm on a Friday, but I was able to get a table right away. There were quite a lot of couples and solo customers in the store. I ordered Zenbu Mazesoba from the chef's specials. I chose this because it's a mixed soba that has everything.
Service is quick and kind.
There are instructions on how to eat Mazesoba next to the chopstick holder on the table. Those who eat it for the first time should use it as a reference. I know the meaning of Mazesoba, so I mixed everything together first. If it's too oily, add vinegar, and if you want it spicier, add more pepper or chili pepper. The taste was too salty for me. Came here for the Hokkaido crème the dessert itself was good but we were disgusted by the smell and how dirty this establishment is esp the floors. The first thing that needs to go are the disgusting floors and just everything about the place needs replaced. Looks like this place maybe use to be a diner but looks like they did not change out anything and my wife and I would never eat here due to sanitary and smell issues.

They now offer free noodle upgrades to XL or XXL sizes! My friend convinced me to go for the XXL and just take it home after. Tt was a good idea as I only ate about half of it. You can't tell from the photo but the bowl is very deep.
I had the Spicy Mazesoba and you can choose a spice level from 1-3. I went with 1 and it was good for me. It seems like they just put in the chili flakes that are also available on the table? My friend had the Zenbu Mazesoba which comes with a bit of everything.

This place is super cute and really yummy. I think it's really value for its price since you can get bigger portions of noodles for free! Also serves you a small bowl of rice after to eat with the remaining sauce. I got the level 1 spicy mazesoba bowl and it was REALLY spicy so I think be cautious if your spice tolerance isn't good. We were able to get a table right when we walked in for lunch on a weekday so overall good service.
